意式蔬菜汤
材料
菜油50毫升
洋葱1个,切片
胡萝卜2个,切丁
大型西芹3根,切碎
青色夏南瓜200克
黄色夏南瓜200克
蒜头2瓣,切细碎
番茄酱2大匙
罐装整个番茄400克,去皮搅碎
蔬菜/鸡高汤1升
罐装白芸豆250克,沥干洗净
意大利面100克,切成小段
白卷心菜250克,切细碎
培根50克
盐和白胡椒粉少许
装饰料
欧芹少许,切细碎
精纯初榨橄榄油少许
做法
- 在大型平底锅中用中火加热菜油。
- 加入洋葱、胡萝卜、西芹和培根,加入盐和胡椒调味,煮10分钟左右,同时不断搅拌至蔬菜熟软。
- 加入蒜头继续翻炒片刻。
- 把搅碎的番茄加入混合物中,确保它均匀裹在蔬菜表面。
- 加入高汤煮滚。
- 转小火,继续炖煮至汤汁入味。
- 加入卷心菜,煮至熟软。
- 加入白芸豆和意大利面,翻炒至面条熟软,可适当添加高汤调节浓度。
- 用盐和胡椒调味,缀以欧芹和精纯初榨橄榄油即可。
Minestrone Soup
Ingredients
50ml vegetable oil
1 onion, sliced
2 carrots, diced
3 large celery sticks, chopped
200g green zucchini
200g yellow zucchini
2 garlic cloves, finely chopped
2 tbsp tomato paste
400g canned whole tomatoes, peeled and blended
1litre vegetable/chicken stock
250g tin cannellini beans, drained and rinsed
100g spaghetti, broken into short lengths
250g white cabbage, finely shredded
50g bacon
salt and white pepper powder to taste
Garnishing
some English/Italian parsley, finely chopped
some extra virgin olive oil
Methods
- Heat vegetable oil in a large pot over medium heat.
- Add onions, carrots, celery and bacon to the pot and season with salt and pepper. Cook them for about 10mins, stirring occasionally until vegetables have softened.
- Add garlic and fry ingredients for another minute.
- Pour tomato puree into mixture and make sure it spreads evenly on vegetables.
- Add chicken/vegetable stock and bring to a boil.
- Reduce heat to a simmer, and cook broth longer for a more intense taste.
- Add cabbage and cook till it softens.
- Add beans and pasta, then continue to sauté till pasta is cooked. Add more stock if soup is too thick.
- Season to taste with salt and pepper, then garnish with parsley and olive oil.
