墨西哥烤肉配无麸质卷饼

材料
素肉块200克,解冻
橄榄油3大匙
红洋葱1个,切细碎
红灯笼椒1个,切丝
黄灯笼椒1个,切丝
蘑菇150克,切片
新鲜芫荽叶1把,切碎
切达芝士碎30克
盐和胡椒少许
无麸质卷饼4片
酸奶油适量
腌味料
烟熏辣椒粉2小匙
孜然1小匙,磨碎
芫荽1小匙,磨碎
盐½小匙
黑胡椒½小匙
辣椒粉½小匙
蒜头1瓣,拍碎
青柠1个,取果皮屑
做法
- 把腌味料拌匀,加入素肉块一起拌匀至表面均匀裹好混合物,加盖冷藏待用。
- 在大型平底锅中,中火加热2大匙清油,加入素肉块煎5-7分钟,取出后保温待用。
- 加热剩余清油,加入洋葱炒香2-3分钟,加入灯笼椒后继续翻炒至熟软。加入蘑菇继续翻炒均匀,煮5分钟后拌入素肉块、芝士碎和芫荽,用盐和胡椒调味。
- 把无麸质卷饼用微波炉加热几秒,卷起素肉和酸奶油一起享用即可。
Gluten Free Fajitas with Quorn Meat Free Pieces
Ingredients
200g Quorn Meat Free Pieces, defrosted
3 tbsp olive oil
½ red onion, finely sliced
1 red pepper, sliced
1 orange pepper, sliced
150g mushrooms, sliced
a bunch of fresh coriander leaves, chopped
30g grated cheddar
salt and pepper to taste
4 gluten free tortillas or pitta breads
some soured cream, to serve
Marinade
2 tsp smoked paprika
1 tsp cumin, ground
1 tsp coriander, ground
½ tsp salt
½ tsp black pepper
½ tsp chilli powder
1 clove garlic, crushed
zest of 1 lime
Method
- Mix Marinade ingredients in a bowl. Stir in Quorn pieces and ensure they are evenly coated. Cover and refrigerate.
- Preheat 2 tbsp of oil in a large pan over a medium heat, add Quorn pieces to cook for 5-7mins. Remove from pan and keep warm.
- Heat up remaining oil, add onions to cook for 2-3mins. Add peppers and continue cooking until soft. Add mushrooms and stir well, continue cooking for 5mins. Stir in Quorn pieces, cheddar and coriander. Season with salt and pepper.
- Heat gluten free pittas or tortilla wraps for a few seconds in microwave, fill with Quorn fajita mix and soured cream.
