摩洛哥鸡肉塔吉锅

材料
清油1大匙
白洋葱2个,切片
去骨鸡腿肉500克,切块
番薯2个,切成2厘米小块
摩洛哥酱4大匙
意式番茄酱500克
小米300克
希腊优格4大匙
芫荽15克,切碎
开心果50克,压碎
做法
- 用中火在深煎锅中加热清油,加入洋葱和少许盐,煮15分钟至焦糖化。
- 加入鸡肉和番薯,继续煮10分钟至鸡肉变色。
- 加入摩洛哥酱翻炒,让食材均匀裹上酱料。再加入番茄酱和200毫升清水,继续煮10分钟。
- 把摩洛哥鸡肉放在平铺在盘中的小米上,淋上希腊酸奶、芫荽与开心果即可。
Easy Moroccan Chicken Tagine
Ingredients
1 tbsp vegetable oil
2 white onions, sliced
500g boneless chicken thighs, cut into chunks
2 sweet potatoes, diced into 2cm cubes
4 tbsp Moroccan paste
500g Italian tomato pasta sauce
300g couscous
4 tbsp Greek yoghurt
15g coriander, chopped
50g pistachios, crushed
Method
- Heat up oil in a deep-frying pan over a medium heat. Add onions with a pinch of salt and cook gently for 15mins, until caramelised.
- Add chicken and sweet potatoes into pan, then continue to cook for 10mins, until chicken starts to colour.
- Add Moroccan paste into pan and mix until ingredients are fully coated. Next, add tomato sauce and 200ml of water, and cook for 10mins.
- Serve tagine on a bed of couscous, finished with Greek yoghurt, chopped coriander and crushed pistachios.
