材料

藜麦卷饼4片
大型虾12只,去壳(保留头部待用)
日本黄瓜1条,切丝
熟黄梨1/4个,去皮去心,切小块
青葱1根,切碎
烤香的白芝麻1小撮

酸甜酱

蒜头2瓣,切碎
小型白洋葱1/2,切片
生姜100克,去皮切片
菜油2大匙
茄汁3大匙
泰式辣椒酱1大匙
酱清1大匙
糖1小匙
生粉1/2大匙,混合2大匙清水
墨西哥辣酱/拉差辣酱1/2小匙(可选)
新鲜青柠汁2大匙(可选)

做法

  1. 在小碗中混合茄汁、泰式辣椒酱、酱清和糖。
  2. 大火加热平底锅,加入菜油加热至滋拉作响,加入蒜头和生姜炒香,加入洋葱继续翻炒2-3分钟,加入酸甜酱材料继续翻炒几分钟至酱汁开始起泡。
  3. 加入黄梨和虾头煮几分钟至虾头煮熟变色。适当调味后,用生粉水勾芡。
  4. 加入虾肉煮熟至变成粉色并且均匀裹上酱汁。
  5. 把卷饼放进干燥的平底锅,用中火把两面加热1-2分钟,或是用微波炉加热20秒。
  6. 在加热的卷饼中心放上青瓜丝,放上3条酸甜虾和适量黄梨块,淋上足量的酸甜酱,缀以芝麻和青葱碎,卷成春卷状即可。

Sweet and Sour Prawn Wraps

Ingredients

4 Mission Quinoa Wraps
12 large grey prawns, peeled (keep the heads aside)
1 Japanese cucumber, shredded
¼ ripe pineapple, skin and core removed, cut into small cubes
1 spring onion, chopped (optional)
a pinch of roasted white sesame seeds

Sweet & Sour Sauce

2 cloves garlic, minced
½ small white onion, sliced
100g ginger, skin removed and sliced
2 tbsp vegetable oil
3 tbsp ketchup
1 tbsp Thai chilli sauce
1 tbsp light soy sauce
1 tsp sugar
½ tbsp cornflour, mix with 2 tbsp of water
½ tsp Tabasco/Sriracha (optional)
2 tbsp fresh lime juice (optional)

Method

  1. In a small bowl, mix ketchup, Thai chilli sauce, soy sauce and sugar together.
  2. In a heated pan placed over high heat, add vegetable oil and wait until oil sizzles. Add garlic and ginger, stir-fry until cooked and aromatic. Add onions and continue to stir fry for 2-3mins, add Sweet & Sour Sauce ingredients into the pan and stir fry for a few more minutes until it starts to bubble slightly.
  3. Add pineapple and prawn heads, cook for a few minutes. Once the heads are well-cooked, adjust taste to your liking. Add cornflour mixture to thicken the sauce.
  4. Add prawns and cook until they turn pink and are fully coated with the sauce.
  5. Warm up wraps on a dry frying pan on medium heat for 1-2mins on each side, or heat wrap in microwave for 20 seconds.
  6. To serve, line some shredded cucumber down the centre of warm wraps, place 3 juicy prawns and some pineapple cubes on each wrap, along with a generous scoop of the sauce. Top with some chopped spring onions and roasted sesame seeds. Fold wrap from the bottom up and then the two sides in.
