法式火腿吐司

材料
北海道牛奶吐司6片
白酱
牛油150克
面粉150克
牛奶1千克
洋葱75克
月桂叶0.75克
黑胡椒0.75克
盐2.25克
肉豆蔻0.7克
做法
- 把牛奶竹棍,加入洋葱、月桂叶和肉豆蔻。
- 过筛后放凉待用。
- 在平底锅中融化牛油,拌入面粉稍微拌匀成面糊。
- 少量多次加入放凉的牛奶,拌匀至无结块。
- 加入黑胡椒和盐。
- 把混合物煮滚,期间不断搅拌至浓稠柔滑,继续煮滚片刻。
- 在吐司上放一层火腿,淋上厚厚的白酱,撒上适量芝士。女士版可打1个鸡蛋。
- 用烤箱烤至金黄即可。
CROQUE MONSIEUR / CROQUE MADAME
Ingredients
6 pieces Hokkaido Milk Toast
Béchamel Sauce
150g butter
150g flour
1kg milk
75g onion
0.75g bay leaf
0.75g black pepper
2.25g salt
0.7g nutmeg
Method
- Bring milk to a boil, infuse with onion, bay leaves and nutmeg.
- Sieve mixture and set aside to use later.
- Melt butter in a saucepan, stir in flour and cook for just a minute to make roux.
- Add in infused milk, a little at a time, stirring well to prevent lumps from forming.
- Add black pepper and salt.
- Bring mixture to a boil, stirring constantly, so that the mixture thickens and becomes glossy. Boil for a couple of minutes.
- Lay a piece of ham on top of each Hokkaido Milk Toast, scoop over Béchamel Sauce and drizzle some cheese on top. For CROQUE MADAME, crack an egg on top.
- Bake in oven till golden brown.
