材料
排骨500克、鸡蛋1粒
盐少许、苏打粉少许
绍兴酒少许
玉米粉2茶匙

酱汁材料
清水50克、浙江醋30克
蚝油1汤匙、辣椒酱2汤匙
麻油1汤匙、白糖30克
炸蒜茸2茶匙

做法

  1. 将排骨、鸡蛋、盐、苏打粉、绍兴酒和玉米粉搅拌在一起,腌15分钟。
  2. 将腌好的排骨油炸熟至金黄色。
  3. 将酱汁调匀,和排骨一起放入锅里,煮至浓稠即可。
烹饪小贴士
选用带有肥肉的排骨,口感会更好。

Ingredients
500g pork ribs, 1 egg
a little salt, a little soda powder
a little shaoxing wine
2 tbsp corn flour

Sauce Ingredients
50g water, 30g Zhejiang vinegar
1 tbsp oyster sauce
2 tbsp chilli paste
1 tbsp sesame oil, 30g sugar
2 tsp fried minced garlic

Method

  1. Mix pork ribs, egg, salt, soda powder,shaoxing wine and corn flour together
    and marinate for 15 minutes.
  2. Deep-fry till golden brown.
  3. Blend the sauce ingredients and add to the wok with the fried pork ribs. Cook till the sauce thickens.
Cooking Tips
Choose slightly fatty pork ribs for better texture.
