材料

米香30克
蒜茸30克
红葱头茸20克
童子鸡块150克
天妇罗粉少许
盐5克
糖5克
胡椒粉5克

腌味料

盐少许
鸡蛋1个
生粉适量
麻油2小匙

脆浆

天妇罗脆浆粉300克
冰水100克
鸡蛋黄1粒
清油50克

做法

  1. 把脆浆材料搅拌均匀待用。
  2. 把鸡块用腌味料拌匀,冷藏入味4小时以上后取出。
  3. 沾上少许天妇罗粉,再均匀裹上脆浆,用热油炸至金黄酥脆。
  4. 在炒锅中爆香蒜茸和红葱头茸,加入米香、胡椒粉、盐、糖和炸鸡块一起翻炒均匀即可。

Taiwanese Fried Chicken with Puffed Rice

Ingredients

30g puffed rice
30g minced garlic
20g minced shallot
150g spring chicken pieces
some tempura flour
5g salt
5g sugar
5g pepper powder

Marinade

dash of salt
1 egg
some starch
2tsp sesame oil

Coating

300g cripsy tempura powder
100g iced water
1 egg yolk
50g oil

Method

  1. Mix Coating ingredients till fully combined. Set aside.
  2. Season chicken with Marinade, store in chiller for 4hrs and remove from fidge.
  3. Coat with some tempura flour, following with mixed coating. Deep-fry in hot oil till golden and cripsy.
  4. Saute minced garlic and shallot in a wok. Add in puffed rice, pepper powder, salt and sugar, toss well with fried chicken and serve hot.
