再利用菜色:烧鸭

材料

香葱卷饼2片
吃剩的烧鸭250-300克,切丝或切碎
本菇1把
吃剩的熟菜心6-8把,稍微切碎
蒜头2瓣,切细碎
清油1大匙
调味用的盐和白胡椒少许

辣蜂蜜酱油

蜂蜜2大匙
酱油2大匙
辣椒粉1/4小匙
五香粉1/2小匙
生姜1小匙,磨成茸
麻油1/2小匙
米醋1/2小匙
白胡椒碎少许

暴腌青辣椒

大型青辣椒4条,切薄片
米醋120毫升
清水120毫升
糖1大匙
蒜头1瓣,切薄片
盐1小匙

做法

  1. 准备暴腌青辣椒:在小型汤锅中把清水和米醋一起煮滚,关火后拌入糖和盐。把液体倒在切碎的辣椒和蒜头上,浸泡10分钟以上即可使用。
  2. 准备蜂蜜酱油:把所有材料混合均匀待用。
  3. 在大型炒锅中用中火加热清油,加入切碎的蒜头和蘑菇,翻炒至蘑菇熟软、酱汁收干,拌入切碎的菜心,用少许盐调味后关火。
  4. 把香葱卷饼用热平底锅每面干煎30秒。
  5. 把加热后的卷饼平铺在盘子中,取一半蘑菇馅料铺在卷饼上,上面摆好烧鸭肉,缀以辣蜂蜜酱油加上几片暴腌青辣椒。
  6. 把卷饼两侧朝内折好,紧紧卷成春卷状,搭配辣蜂蜜酱油享用即可。

小贴士:不喜辣的人可选择不要在蜂蜜酱油内加入辣椒粉,腌辣椒也可用腌萝卜或胡萝卜代替。
除了烧鸭肉,也可灵活运用其它肉类。

Roast Duck Wrap with Honey-Soy Sauce

Ingredients

2 Supersoft onion & chives wraps
250–300g leftover roast duck, shredded or chopped
1 bunch shimeji mushrooms
6–8 bunches leftover blanched chye sim, roughly chopped
2 cloves garlic, finely chopped
1 tbsp cooking oil
salt and white pepper to season

Spicy Honey-Soy Sauce

2 tbsp honey
2 tbsp soy sauce
¼ tsp chilli powder
½ tsp Chinese five spice powder
1 tsp ginger, finely grated
½ tsp sesame oil
½ tsp rice vinegar
dash of ground white pepper

Quick-pickled Green Chillies

4 large green chillies, thinly sliced
120ml rice vinegar
120ml water
1 tbsp sugar
1 clove garlic, thinly sliced
1 tsp salt

Method

  1. Prepare quick-pickled green chillies: In a small saucepan, bring water and vinegar to a simmer. Turn off heat and stir in sugar and salt. Pour solution over sliced chillies and garlic, soak for 10mins before using.
  2. Prepare honey-soy sauce: Mix all ingredients together until well-combined. Set aside.
  3. In a large frying pan, heat up cooking oil over medium-high heat. Add chopped garlic and mushrooms, sauté until mushrooms are cooked through and the gravy has dried, then toss in chopped chye sim. Season with a pinch of salt, turn off heat.
  4. Heat Supersoft onion & chives wraps on a dry pan for 30 seconds on each side.
  5. Assemble wraps by laying Supersoft onion & chives wrap on a plate. Put half of cooked mushroom fillings on each wrap, top with shredded roast duck. Drizzle with spicy honey-soy sauce, then top with a few slices of pickled chilli.
  6. Fold over two opposite edges of wrap, then roll into a tight wrap. Serve alongside remaining spicy honey-soy sauce for dipping.

Tips:
If you cannot eat chilli, you can leave chilli powder out of honey-soy sauce, and pickle some daikon radish or sliced carrot instead of chilli.

You can also use any other type of roast meat here instead of roast duck.
