炸酱面

材料
江西米粉600克, 汆烫
黄瓜丝200克
生粉3大匙,用2大匙清水拌匀
酱料
红葱头碎100克
蒜蓉100克
猪肉碎500克
黄豆酱120克
清水1升
黑酱油120克
黄豆干100克,切丁后汆烫
麻油少许
调味料
糖80克
盐5克
鱼露1小匙
做法
1.在炒锅内加热少许清油,用中火把红葱头碎和蒜蓉炒香。
2.加入猪肉碎翻炒3分钟,然后加入黄豆酱继续翻炒2分钟。
3.加入清水和黑酱油,转小火焖煮5分钟。
4.把调味料倒进锅中搅拌均匀,加入生粉勾芡后,加入黄豆干和麻油。
5.把煮好的酱料淋在江西米粉上,缀以黄瓜丝即可。
Braised Pork Noodles
serves 5
Ingredients
600g Jiangxi vermicelli
200g shredded cucumbers
3tbsp potato starch, mix with 2tbsp water
Sauce
100g minced shallot
100g minced garlic
500g minced pork
120g soya bean paste
1litre water
dark soya sauce
100g tau kaw, diced
some sesame oil
Seasoning
80g sugar
5g salt
1tsp fish sauce
Methods
1.Heat up some oil in a wok, saute minced shallot and garlic until fragrant over medium heat.
2.Add in minced pork and stir-fry for 3mins. Add in soya bean paste to stir-fry for another 2mins.
3.Add in water and dark soy sauce, lower the heat and simmer for 5mins.
4.Add in Seasoning and mix well. Thicken gravy with potato starch. Add in tau kaw dices and sesame oil.
5.Drizzle sauce over Jiangxi vermicelli, garnish with shredded cucumbers and serve hot.
