青酱葡萄柚生菜沙拉
沙拉
松仁1大匙
熟牛油果1个,切片
混合沙拉菜55克
葡萄柚1个,去白皮,撕小块
沙拉酱
罗勒叶30克
红葱头15克,去皮切碎
红酒醋100克
橄榄油300克
法式芥末酱1大匙
蒜头1瓣,压泥
做法
- 准备沙拉酱:把除橄榄油外所有材料搅打均匀,搅打期间慢慢加入橄榄油。
- 加入少许盐和胡椒调味。放置待用。
- 用中小火加热平底锅,加入松仁后轻轻摇晃平底锅翻炒至金黄。关火晾凉。
- 把沙拉菜和沙拉酱拌匀,撒上松仁、葡萄柚和牛油果即可。
Mixed Green Salad with Basil Vinaigrette
Salad
1 tbsp pine nuts
1 ripe avocado, sliced into wedges
55g mixed greens
1 red grapefruit, peel and segment with no white pith left
Dressing
30g basil leaves
15g shallots, peel and roughly chop
100g red wine vinegar
300g olive oil
1 tbsp dijon mustard
1 clove garlic, grated
Method
- Prepare dressing: Blend all ingredients except olive oil in a blender. Gradually add olive oil in a slow steady stream while blending.
- Add dash of kosher salt and pepper into dressing to taste. Set aside.
- Heat up a pan over medium-low heat. Add in pine nuts and gently move pan to rotate pine nuts until golden brown. Off heat and let cool.
- Toss mixed green with dressing. Sprinkle pine nuts, grapefruit and avocado on top. Serve.
