材料

鱿鱼140克(切成½寸鱿鱼圈)
面粉5克
天妇罗炸浆
天妇罗面粉80克
冰苏打水60毫升
柠檬½个,取果皮屑
辣椒碎少许
盐少许
糖少许

青酱

芫荽叶30克
罗勒10克
指天椒5克
橄榄油30毫升
糖5克
酱油5毫升

做法

  1. 准备天妇罗炸浆:把材料混合均匀后静置20分钟待用。
  2. 准备亚洲青酱:把材料搅打至柔滑待用。
  3. 中火加热橄榄油至180°C。
  4. 把鱿鱼圈均匀裹上天妇罗炸浆,小心从锅沿滑下,炸成金黄色。
  5. 捞起沥干后搭配青酱享用即可。

Calamari Fritters with Asian Pesto

Ingredients

140g calamari (cut into ½ inch slices)
5g plain flour

Tempura Batter

80g tempura flour
60ml ice soda water
½ lemon zest
a pinch of chilli flakes
a pinch of salt
a pinch of sugar

Asian Pesto

30g coriander
10g basil
5g chilli padi
30ml olive oil
5g sugar
5ml soy sauce

Method

  1. Prepare tempura batter: Mix all ingredients together and let it rest for 20mins.
  2. Prepare Asian pesto: Blend all ingredients until a smooth paste forms. Set aside.
  3. Heat olive oil over medium heat until 180°C.
  4. Coat sliced calamari with tempura batter and gently slide into frying pan. Fry until golden brown.
  5. Drain and serve with Asian pesto.
