面粉800克
小麦粉200克
鸡蛋8个

肉酱

牛腿肉600克,切小块
猪排600克,切小块
意大利鲜去皮番茄酱1升
白葡萄酒1杯
胡萝卜1条,切小块
西芹1条,切小块
洋葱1个,切小块

烟熏白酱

牛奶1升
牛油80克
面粉80克
烟熏奶酪200克,切小块
盐、胡椒和糖少许

配料

帕玛森芝士碎200克
水牛奶酪500克,切块

做法

  1. 准备千层面皮:把材料在大碗里混合,均匀捏成面团。冷藏3小时。
  2. 把面团擀成2毫米厚的面皮,切成长方形。
  3. 用加盐的滚水把面皮煮熟,沥干后和适量橄榄油一起保存带用。
  4. 准备肉酱:在平底锅内加热2大匙橄榄油,把胡萝卜、西芹和洋葱块煎香。
  5. 加入牛肉和猪肉块,把每一面都均匀煎香后倒进白酒静置数分钟。
  6. 加入去皮番茄酱,小火炖煮6小时至肉质熟软,用少许盐和胡椒调味待用。
  7. 准备烟熏白酱:热锅,融化黄油后加入面粉翻炒至金黄色,少量多次加入牛奶,用打蛋器搅拌均匀。
  8. 煮滚5分钟,期间不断搅拌防止煮焦,加入烟熏奶酪至完全融化。
  9. 在烤盘上铺上一层煮好的面皮,放上适量肉酱、少许烟熏白酱、适量帕玛森芝士碎和水牛奶酪,用另一片面皮盖好,重复步骤至叠到烤盘顶端。
  10. 用180度烤35分钟,出炉前静置10分钟即可。

Pasta Sheets

800g flour
200g semolina flour
8 whole eggs

Neapolitan Ragout

600g beef rump, tiny cubed
600g pork chop, tiny cubed
1 lit Italian pilled tomatoes
1 glass white wine
1 carrot, tiny cubed
1 celery stick, tiny cubed
1 onion, tiny cubed

Smoked Béchamel Sauce

1 lit milk
80g butter
80g plain flour
200g scamorza cheese, tiny cubed
dash of salt, pepper and sugar

Finishing

200g grated parmesan
500g mozzarella cheese, cubed

Method

  1. Prepare pasta sheets: Combine ingredients together in a bowl, knead until dough get the consistence. Rest for 3 hours in chiller.
  2. Stretch dough until 2mm in thickness and cut into rectangular sheets.
  3. Cook sheets in salted boiling water. Drain and keep in a container with some olive oil.
  4. Prepare Neapolitan ragout: Heat up 2 tbsp olive oil in a pan. Sear carrot, celery and onion cubes until fragrant.
  5. Add in beef and pork cubes to sear each side properly. Add in wine and leave for a few minutes.
  6. Add in pilled tomatoes and slow cook for at least 6hours until meat completely soft and flaky. Season with dash of salt and pepper, set aside.
  7. Prepare béchamel sauce: In a pot melt butter and stir in flour until becomes gold colour. Start to add in milk bit by bit and mix evenly with a whisk.
  8. Bring to boil for 5min and keep whisking to prevent burning. Add in scamorza cheese cubes and let it melt.
  9. In a tray, put a layer of pasta sheet, add a few spoons of ragout, a few drops of béchamel sauce, some grated parmesan cheese and mozzarella cheese cubes. Cover with another pasta sheet and repeat the step until reaches top of the tray.
  10. Bake in oven at 180 for 35mins and let it rest for 10mins before serving.
