面片

面粉800克
小麦粉200克
鸡蛋8个

酱料

新鲜龙虾肉2份,切块
樱桃番茄400克,切半
蒜头1个,切碎
新鲜欧芹和罗勒叶少许
½杯白葡萄酒

做法

  1. 准备面片:把材料在大碗里混合,均匀捏成面团。冷藏3小时。
  2. 取出,擀平至3毫米厚度,切成长约3厘米的方形面片。
  3. 在加盐的滚水中煮5分钟,沥干待用。
  4. 把蒜头碎煎香至金色,加入龙虾肉和樱桃番茄继续翻炒数分钟。
  5. 加入白酒1分钟后关火,加入面片翻拌几分钟至均匀。
  6. 加入少许精纯初榨橄榄油、切碎的新鲜欧芹和罗勒叶拌匀即可。

Maltagliati al sugo di astice

Maltagliati

800g flour
200g semolina flour
8 whole eggs

Sauce

2 fresh lobster meat, cubed
400g cherry tomatoes, halved
1 garlic, chopped
a few leafs of fresh parsley and basil
½ glass white wine

Method

  1. Prepare maltagliati: Combine ingredients together in a bowl, knead until dough get the consistence. Rest for 3 hours in chiller.
  2. Take out from chiller and stretch dough until 3mm thick. With a roller blade, cut into 3cm squares.
  3. Cook in salted boiling water for 5mins. Drain and set aside.
  4. Sear chopped garlic until gold, add in lobster and cherry tomatoes to keep cooking for a few minutes.
  5. Add in white wine and off heat after 1min. Add in cooked pasta and toss well for a few minutes.
  6. Add a touch of extra virgin olive oil, chopped leaf and toss again before serving.
