芋圈

芋头200克,蒸熟后压成泥
澄面粉40克
滚水60克
清油40克
发粉少许
盐少许
五香粉少许
糖少许
胡椒粉少许

炸排骨

猪排500克
捶松
花雕酒1大匙
老抽½大匙
生粉少许

调味料

白醋3大匙
糖3大匙
盐3大匙
鸡精½小匙
老抽少许
番茄酱少许

做法

  1. 把芋圈材料搅拌均匀,做成环形,热油炸至金黄酥脆待用。
  2. 把排骨材料混合后腌味30分钟,然后热油炸至金黄待用。
  3. 把调味料煮滚后用适量生粉勾芡,加入排骨翻拌均匀后倒在芋圈里,缀以少许芝麻即可。

Pork Ribs in Yam Ring

Yam Ring

200g yam, steam and mash into paste
40g wheat flour
60g boiling water
40g oil
some starch
some salt
some five-spice powder
some sugar
soem pepper powder

Fried Ribs

500g pork ribs
pound to tenderize
1 tbsp huadiao wine
½ tbsp dark soy sauce
some starch

Seasoning

3 tbsp white vinegar
3 tbsp sugar
3 tbsp salt
½ tsp chicken powder
some dark soy sauce
some ketchup

Method

  1. Mix Yam Ring ingredients until fully combined. Make into a ring and deep-fry until crispy and golden brown. Set aside.
  2. Mix all Fried Ribs ingredients to marinate for 30mins. Deep-fry until golden brown. Set aside.
  3. Bring Seasoning to a boil. Thicken with some starch. Add in fried ribs and toss well. Pour into yam ring and sprinkle some sesame.
