芋头200克,蒸熟后压成泥
澄面粉40克
滚水60克
清油40克
发粉少许
盐少许
五香粉少许
糖少许
胡椒粉少许
炸排骨
猪排500克
捶松
花雕酒1大匙
老抽½大匙
生粉少许
调味料
白醋3大匙
糖3大匙
盐3大匙
鸡精½小匙
老抽少许
番茄酱少许
做法
- 把芋圈材料搅拌均匀,做成环形,热油炸至金黄酥脆待用。
- 把排骨材料混合后腌味30分钟,然后热油炸至金黄待用。
- 把调味料煮滚后用适量生粉勾芡,加入排骨翻拌均匀后倒在芋圈里,缀以少许芝麻即可。

Yam Ring
200g yam, steam and mash into paste
40g wheat flour
60g boiling water
40g oil
some starch
some salt
some five-spice powder
some sugar
soem pepper powder
Fried Ribs
500g pork ribs
pound to tenderize
1 tbsp huadiao wine
½ tbsp dark soy sauce
some starch
Seasoning
3 tbsp white vinegar
3 tbsp sugar
3 tbsp salt
½ tsp chicken powder
some dark soy sauce
some ketchup
Method
- Mix Yam Ring ingredients until fully combined. Make into a ring and deep-fry until crispy and golden brown. Set aside.
- Mix all Fried Ribs ingredients to marinate for 30mins. Deep-fry until golden brown. Set aside.
- Bring Seasoning to a boil. Thicken with some starch. Add in fried ribs and toss well. Pour into yam ring and sprinkle some sesame.
