材料A

甘榜鸡1只
切4块
洗净沥干
香茅3根
蓝姜100克
洋葱150克
蒜头200克

材料B

清水适量
香茅3根
疯柑叶100克
盐少许

调味料

盐少许
鸡精粉¼小匙
黄姜粉50克
石栗粉60克

做法

  1. 把香茅、蓝姜、洋葱和蒜头加入搅拌机,加入少许清水搅拌成糊,倒进碗中。
  2. 加入调味料和鸡肉一起搅拌均匀,腌味24小时。
  3. 把材料B煮滚,加入腌好的鸡肉,转小火煮2小时。
  4. 把鸡肉捞出沥干,油炸至金黄色即可。

Fried Kampong Chicken

Ingredients A

1 kampong chicken
chop into 4 pieces
rinse and drain
3 lemongrass
100g galangal
150g onion
200g garlic

Ingredients B

some water
3 lemongrass
100g kaffir lime leaves
some salt

Seasoning

some salt
¼ tsp chicken powder
50g turmeric powder
60g candlenut powder

Method

  1. Blend lemongrass, galangal, onion and garlic with some water in blender to form paste. Transfer into a bowl.
  2. Add Seasoning and chicken into bowl. Toss well. Marinate for 24hrs.
  3. Bring Ingredients B to a boil. Add in chicken and cook over low heat for 2hrs.
  4. Drain and deep-fry chicken until golden brown.
