材料A
排骨600克
生粉20克
红辣椒1根(去籽切片)

材料B
干豆豉1包(浸软)
蒜茸20克
生粉10克
盐6克
鸡精粉6克
糖16克
胡椒粉、麻油和生油少许

做法

  1. 把排骨和生粉拌匀,放置30分钟后冲洗滤干待用。
  2. 把豆豉用少许清油炒香待用。
  3. 取一半蒜茸,用少许清油炒香。
  4. 把材料B混合均匀,加入排骨搅拌均匀,大火蒸8分钟,撒上少许红辣椒碎即可。

 

Steamed pork Rib With Preserved Soya Bean

Ingredients A
600g pork ribs
20g potato starch
1 red chilli (diced and sliced)

Ingredients B
1 pack dried fermented black beans (soaked)
20g minced garlic
10g potato starch
6g salt
6g chicken powder
16g sugar
some sesame oil, pepper powder and oil

Method

  1. Mix pork ribs with potato starch. Set for 30mins. Rinse with running water and drain well.
  2. Saute soaked fermented black beans with a little bit of oil until fragrant. Set aside.
  3. Take half amount of minced garlic to saute until fragrant.
  4. Mix all Ingredients B. Add in pork ribs and toss well. Steam over high heat for 8mins. Sprinkle some red chilli and serve.
