材料
烧卖皮30片
咸蛋黄碎少许

馅料
猪肉碎300克
虾仁200克(切丁)
冬菇50克(切丁)
肥猪肉碎50克
生粉15克
盐6克
鸡精粉6克
糖15克
猪油20毫升
蛋黄1个
麻油和胡椒粉少许

做法

  1. 把馅料搅匀,放入冰箱冷藏30分钟。
  2. 取一张烧卖皮,放入15克馅料,捏成圆形烧卖的形状。重复步骤至馅料用完。
  3. 在烧卖上放上少许咸蛋黄碎,放进刷过油的小笼屉,大火蒸约5分钟即可。

 

Siew Mai

Ingredients
30 siew mai skin
some salted egg yolk paste

Fillings
300g minced pork
200g peeled prawn (diced)
50g shiitake (diced)
50g minced pork fat
15g potato starch
6g salt
6g chicken powder
15g sugar
20ml pork lard
some sesame oil and pepper powder
1 egg yolk

Method

  1. Mix Fillings ingredients together. Chill in fridge for 30mins.
  2. Take a piece of siew mai skin, wrap in 15g fillings and mold it into siew mai shape. Reapeat to finish all fillings.
  3. Place some salted egg yolk on the top of siew mai. Steam in a greased steamer over high heat for about 5 mins.
