红豆皇后

材料
高筋面粉250克
小麦胚芽25克
酵母粉4克
水140克
牛奶25克
砂糖15克
无盐牛油20克
盐5克

馅料
红豆沙100克
奶油芝士100克(搅拌至软化)

做法

  1. 预热烤箱上火至190°C,下火至150°C。
  2. 把馅料混合均匀待用。
  3. 把除无盐牛油外的所有材料慢慢搅拌均匀,拌入无盐牛油,揉成光滑有弹性的面团。
  4. 把面团放进涂上油的盆中,喷少许清水后盖好,发酵60分钟至双倍大。
  5. 挤出面团内的多余空气,分成每份60克的小份,搓成圆形,盖上保鲜膜继续发酵20分钟。
  6. 撒上少许面粉,把小面团压扁,放上适量馅料包好,排列在烤盘上,稍微压扁。
  7. 发酵至双倍大后,放进烤箱烤16分钟即可。

 

Red Bean Queen

Ingredients
250g high-protein powder
25g wheat germ
4g yeast powder
140g water
25g milk
15g sugar
20g unsalted butter
5g salt

Fillings
100g red bean paste
100g cream cheese (stir to soften)

Method

  1. Preheat oven upper heat to 190°C and lower heat to 150°C.
  2. Mix Fillings evenly and set aside.
  3. Slowly mix all Ingredients except unsalted butter until fully combined. Fold in unsalted butter. Knead until a glossy and elastic dough.
  4. Place dough into a greased bowl. Spray some water and cover to rise for 60 mins until doubled size.
  5. Press to squeeze out the air inside dough. Divide into 60g portions and roll into balls. Cover with cling paper and rise again for 20 mins.
  6. Sprinkle some flour and flatten dough balls. Place some fillings at centre and wrap well. Line on a baking tray and slightly press to flatten.
  7. Rinse until doubled size. Bake in oven for 16 mins.
