- 准备面皮：把高筋面粉和鸡蛋拌匀， 用手捏至光滑，用保鲜膜包好，放置4小时以上待用。
Poached Seaweed and Abalone Fortune Dumpling
250g high-gluten flour
300g chicken thigh (diced)
2 tsp salt
1 pack enokitake (sectioned)
120g kelp (soaked)
3 tsp sugar
2 tbsp oyster sauce
3 canned abalone (diced)
50ml dark vinegar
50ml light soy sauce
2 tsp minced garlic
1 tsp minced chili
2 tsp chilli oil
- Prepare skin: Mix high-gluten flour and eggs. Knead until glossy. Wrap with cling paper and set for at least 4hrs.
- Prepare fillings: Mix diced chicken thigh and salt until sticky. Add in remaining ingredients and mix well.
- Divide dough into smaller portions and flatten into round skins. Place fillings at centre and wrap well.
- Bring half pot of water to a boil. Add in dumplings and cook for 2-3mins until float on surface. Continue cook for 20seconds and drain.
- Mix all Condiments and serve with dumplings.
