满袋金元宝(昆布鲍鱼饺子)
50粒

面皮
高筋面粉250克
鸡蛋4粒

馅料
鸡腿肉300克(切丁)
盐2小匙
金针菇1包(切段)
昆布120克(浸软)
糖3小匙
蚝油2大匙
罐装鲍鱼3粒(切丁)

配料
黑醋50毫升
酱青50毫升
蒜茸2小匙
辣椒碎1小匙
辣椒油2小匙

做法

  1. 准备面皮:把高筋面粉和鸡蛋拌匀, 用手捏至光滑,用保鲜膜包好,放置4小时以上待用。
  2. 准备馅料:把鸡腿肉加盐搅拌至起胶,加入剩余材料搅拌均匀。
  3. 把面团分成小块,擀成面皮,放上馅料裹好。
  4. 把半锅水煮至滚,加入饺子煮2-3分钟至浮起,继续煮约20秒后捞出沥干。
  5. 混合所有配料,佐配饺子享用即可。

 

Poached Seaweed and Abalone Fortune Dumpling
makes 50

Skin
250g high-gluten flour
4 eggs

Fillings
300g chicken thigh (diced)
2 tsp salt
1 pack enokitake (sectioned)
120g kelp (soaked)
3 tsp sugar
2 tbsp oyster sauce
3 canned abalone (diced)

Condiments
50ml dark vinegar
50ml light soy sauce
2 tsp minced garlic
1 tsp minced chili
2 tsp chilli oil

Method

    1. Prepare skin: Mix high-gluten flour and eggs. Knead until glossy. Wrap with cling paper and set for at least 4hrs.
    2. Prepare fillings: Mix diced chicken thigh and salt until sticky. Add in remaining ingredients and mix well.
    3. Divide dough into smaller portions and flatten into round skins. Place fillings at centre and wrap well.
    4. Bring half pot of water to a boil. Add in dumplings and cook for 2-3mins until float on surface. Continue cook for 20seconds and drain.
    5. Mix all Condiments and serve with dumplings.
