挪威带子冬粉

材料
挪威大型带子(带壳)10个(洗净)
冬粉150克(浸软1小时后沥干)
香蒜茸
玉蜀黍油1000克
蒜头400克(去皮切碎)
鸡精粉20克
细盐10克
糖5克
芝麻酱青
清水300克
酱青25毫升
鲜酱油45克
芫荽15克
冰糖40克
鸡精粉5克
麻油12克
装饰料(浸冰水1小时)
辣椒丝10克
青葱丝20克
芫荽叶10克

做法

  1. 准备香蒜茸:加热玉蜀黍油至120℃后关火。把150克蒜头碎放进漏勺中用水龙头慢慢冲洗2分钟,用厨房用纸巾沥干,用再次加热的玉蜀黍油炸成金黄色,沥干待用。
  2. 加热750毫升玉蜀黍油,把剩余蒜头碎翻炒至香。加入剩余香蒜茸调味料翻炒1分钟,加入炸好的蒜头碎翻炒均匀待用。
  3. 准备芝麻酱:把清水煮滚,加入除麻油外的所有调味料搅拌均匀,慢火煮滚3分钟,慢慢拌入麻油后放置待用。
  4. 把30克冬粉放在每片贝壳上,上面放上带子,加盖蒸3-4分钟。
  5. 在带子上倒上1大匙芝麻酱青和香蒜茸,缀以装饰料即可。

 

Steamed Norwegian Giant Scallop with Glass Noodle and Fragrant Garlic
serves 10

Ingredients
10 Norway giant scallop with shells (rinsed)
150g glass noodle (soak for 1hr and drain)

Fragrant Garlic
1000g corn oil
400g garlic (peel and chop)
20g chicken powder
10g fine salt
5g fine sugar

Sesame Sauce
300g water
25ml light soya sauce
45g maggi seasoning
15g Chinese parsley stem
40g rock sugar
5g chicken powder
12g sesame oil

Garnishing (soak in iced water for 1hr)
10g julienned red chilli
20g shredded spring onion
10g Chinese parsley leaves

Method

  1. Prepare fragrant garlic: Heat up corn oil to 120℃. Off the fire. Place 150g chopped garlic in strainer and rinse under slow running tap water for 2mins. Dry with paper towel. Heat up oil again and deep-fry until golden brown. Drain and set aside.
  2. Heat up 750ml corn oil. Stir-fry remaining chopped garlic slowly until fragrant. Add in remaining Fragrant Garlic ingredients and continue to stir-fry for 1min. Mix in deep-fried garlic and set aside.
  3. Prepare sesame sauce: Bring water to a boil. Add in all ingredients except sesame oil. Stir well and slow boil for 3mins. Slowly stir in sesame oil and set aside.
  4. Place 30g soaked glass noodle on top of shells and top with giant scallops. Steam with cover over high heat for 3 – 4 mins.
  5. Pour 1 tbsp sesame sauce and 1tbsp fragrant garlic on top of scallop. Dress with Garnishing and serve.
