混合风罗惹
6-8人份

泰国花生酱
花生酱120克
泰国甜辣酱80克
酸柑1个(切半,挤汁)
虾膏1大匙
罗惹花1小匙(切碎)

意大利油炸面包
面包用面粉300克
细盐5克
马铃薯160克(煮熟,捣碎)
温水350毫升
干酵母10克

配料
熟菠萝1个(切块)
沙葛1个(切块)
黄瓜1条(切块)
豆芽100克(汆烫)
烤香的花生碎80克

做法

  1. 准备泰国花生酱:把青柠汁倒进大搅拌碗中,加入剩余材料一起搅拌均匀待用。
  2. 准备意大利油炸面包:把酵母放进温水,封紧后放置15-20分钟至发酵。
  3. 把发酵的酵母和剩余材料混合均匀,搅拌至顺滑后用保鲜纸封紧,发酵20 – 30分钟。
  4. 热油,用两个小勺子盛出发酵完成的面团,放入油锅炸成外皮酥脆的金黄色球状,晾凉后切半。
  5. 取200克泰国花生酱和500克意大利油炸面包放入大碗中,加入除烤花生碎外的所有配料,搅拌均匀。
  6. 洒上烤花生碎即可。

 

Fusion Rojak
serves 6 – 8

Thai Peanut Dressing
120g peanut butter
80g Thai sweet chili sauce
1 large lime (halve and squeeze juice)
1 tbsp prawn paste
1 tsp rojak flower (chopped)

Pettore Frittos (Italian Fried Bread)
300g bread flour
5g fine salt
160g local potato (cook and mash)
350ml lukewarm water
10g dried yeast

Condiments
1 ripe pineapple (cut into pieces)
1 local turnips (cut into pieces)
1 cucumber (cut into pieces)
100g bean sprout (blanced)
80g roasted ground peanut

Method

  1. Prepare Thai peanut dressing: Add lime juice into a mixing bowl and followed by remaining ingredients. Toss well and set aside.
  2. Prepare Italian fried bread: Add yeast into lukewarm water and seal it tightly. Set aside for 15-20 minutes until proofing.
  3. Mix proofing yeast with remaining ingredients until smooth. Seal with cling wrap and set in a warm area for 20-30mins.
  4. Heat up some cooking oil. Using 2 spoons to scoop up batter and deep-fry until crispy and golden-brown. Leave to cool and cut into half.
  5. Take 200g Thai peanut dressing and 500g Italian fried bread to place into large mixing bowl. Add all Condiments except roasted ground peanut. Toss well.
  6.  Sprinkle roasted ground peanut on top and serve.
