和牛鞑靼

材料
和牛臀肉150克(冷冻剁碎)
腌黄瓜20克(剁碎)、小葱头20克(剁碎)
蛋黄1颗、香菜5克(剁碎)
第戎芥末10毫升、塔巴斯科辣油5毫升
沙律菜50克、盐少许、胡椒粉少许

做法

  1. 将牛肉碎、小葱头、腌黄瓜和香菜搅拌在一起。
  2. 加上盐、胡椒粉和塔巴斯科辣油,搅拌均匀。
  3. 将第戎芥末涂抹在盘子上,再将搅拌好的鞑靼放入8公分的圆形模型里。
  4. 加上蛋黄和沙律菜即可。

烹饪小贴士
不喜欢吃牛肉的话,可以改用烟熏三文鱼。

 

Wagyu Beef Tartare

Ingredients
150g wagyu beef rump (chilled and minced)
20g gherkins (chopped)
20g shallots (chopped)
1 egg yolk
5g Italian parsley (chopped)
10ml Dijon mustard
5ml red tabasco sauce
50g Mesclun salad mix
salt to taste
black pepper to taste

Method

  1. Mix the minced beef, shallots, gherkins and Italian parsley together.
  2. Add salt, black pepper and red tabasco.
  3. Spread the Dijon mustard on a plate. Gently press the tartare mixture into a round mould.
  4. Place the egg yolk on top. Garnish with Mesclun salad mix and serve chilled.

Cooking Tips
If you do not like to eat beef, you can replace with smoked salmon.
