奇异果马克杯蛋糕

材料
黄金奇异果1个,去蒂去皮后切小块
燕麦奶1大匙
精纯初榨橄榄油1大匙,味道清淡
蜂蜜2小匙
全麦自发面粉2大匙
喜欢的优格适量
装饰用的薄荷叶少许

做法
1 把半个奇异果放进微波炉可用的马克杯,用叉子稍微捣碎,加入燕麦奶、油和蜂蜜拌匀,然后拌入面粉。
2 用大火微波55秒至蛋糕变得有弹性,开始脱离杯子边缘,取出放凉1分钟。
3 搭配一勺喜欢的优格和剩余的奇异果小块,缀以薄荷叶即可。

Kiwifruit Mug Cake

Ingredeints
1 golden kiwifruit, ends and skin removed, finely diced
1 tbsp oat milk
1 tbsp extra virgin olive oil, light in flavour
2 tsp honey
2 tbsp wholemeal self-raising flour
yoghurt of your choice to serve
mint leaves for garnishing

Method
1 Put half of Kiwifruit in a microwave-safe mug. Use a fork to roughly mash. Add milk, oil, and honey. Stir until combined, then stir in flour.
2 Microwave on high for 55 seconds or until cake is springy and pulling away from the side of the mug. Allow cooling for 1min.
3 Serve with a scoop of yogurt, the remaining kiwifruit dices, garnish with mint leaves.
