椰蓉烤虾

材料
虾450克,解冻
面粉½杯
鸡蛋1个
椰浆½杯
青柠2个,磨果皮碎,挤果汁
无糖椰蓉1½杯
姜粉1小匙

做法
1 选择“面包糠炸虾”1档模式预热烤箱12分钟。
2 把虾开背,沿背部下刀,在尾巴处停下,让虾可以尾巴朝上站立,用纸巾拍干。
3 在一个较浅的碗盘中混合面粉、鸡蛋、椰浆、青柠果皮碎和果汁,成光滑的面糊。
4 在一个盘子中把无糖椰蓉和姜粉混合均匀。把虾先裹上面糊,然后沾满椰蓉混合物,尾巴朝上放在烤盘上。
5 均匀喷上油,烹饪12分钟。
6 缀以新鲜香草,搭配青柠和蘸酱享用即可。

Coconut Shrimp

Ingredients
450g shrimp, thawed
½ cup flour
1 egg
½ cup coconut milk
2 limes, zest and juice
1½ cup unsweetened coconut flakes
1 tsp ground ginger

Method
1 Preheat oven by selecting “Fried Shrimp with Bread Crumbs” 1 level for 12mins.
2 Butterfly shrimp, cut through the back, stopping at the tail, so they’re able to stand tail up. Pat dry with paper towel.
3 In a shallow bowl, mix flour, egg, coconut milk, lime zest and juice to form a smooth batter.
4 On a plate, combine coconut flakes and ground ginger. Dip shrimps in batter followed by coconut flake mixture. Place on a baking tray with tail up.
5 Spray with cooking spray and cook for 12mins.
6 Garnish with fresh herbs, serve with lime and cocktail sauce.
