素食也美味!

香辣芝麻酱拌面
材料
冷冻枝豆150克
拉面饼2块
香辣芝麻酱
生姜15克
蒜头2瓣
干辣椒碎1小匙
辣椒粉½小匙
芝麻酱2大匙
酱油2大匙
米醋1大匙
糖1小匙
青葱4根
麻油2大匙
菜籽油1大匙
做法
1 把拉面饼和冷冻枝豆放进中型汤锅,倒进滚水至没过食材。
2 煮滚后继续加热3分钟,或按照包装说明把拉面煮熟,然后沥干后放在滤网中待用。
3 保留一杯煮面水。与此同时,把生姜和蒜头去皮磨碎,放进一个大碗中。
4 把青葱修剪后切碎,加入碗中,跟着加入辣椒片、辣椒粉、酱油、米醋和糖。
5 把汤锅用中高火加热,加入麻油和菜籽油,油热后淋在辣椒油材料上,翻炒出滋滋声。
6 把芝麻酱加入辣椒油中,搅拌均匀,然后加入沥干的面条和毛豆。
7 加少许煮面水,搅拌至所有食材都均匀裹上酱汁。
8 盛入碗中,撒上少许黑芝麻即可。
Creamy Tahini Chilli Noodles
Ingredients
150g frozen edamame beans
2 ramen noodle nests
Creamy Tahini Chilli Oil
15g ginger
2 cloves garlic
1 tsp chilli flakes
½ tsp hot chilli powder
2 tbsp tahini
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sugar
4 spring onions
2 tbsp sesame oil
1 tbsp vegetable oil
Method
1 Add ramen noodle nests and edamame beans to a medium pot and cover them with boiled water.
2 Bring to the boil and cook for 3mins, or according to packet instructions, then drain and set aside in a colander.
3 Reserve a cup of cooking water and the pot for later. Meanwhile, peel and grate ginger and garlic into a large bowl.
4 Trim, then chop spring onions, add chopped spring onions to the bowl with chilli flakes, hot chilli powder, soy sauce, rice vinegar and sugar.
5 Return reserved pot to a medium-high heat and add sesame oil and vegetable oil. Once oil is hot, pour it over chilli oil ingredients and get sizzling.
6 Add tahini to chilli oil, stir everything together, then add drained noodles and edamame beans.
7 Add a splash of cooking water and mix until everything is coated.
8 Serve in bowls topped with some black sesame seeds.
