蔬菜小零食

蜂蜜百里香烤茄子脆片
材料
面粉25克
意大利粗玉蜀黍面25克
长形茄子2个,切片
橄榄油适量
澄清蜂蜜3大匙,另备适量待用
百里香6枝,保留叶片
新鲜薄荷15克
零脂肪希腊优格100克
蒜头½瓣,拍碎
卡宴辣椒粉少许
做法
1 烤箱预热至200°C(或风扇模式下180°C)。把面粉、粗玉蜀黍面和适当调味料放进大型搅拌碗,把茄子片放进混合物中拌匀,直至茄子表面均匀裹好混合物。
2 在2个烤盘上铺好烘焙纸,轻轻刷上或喷上橄榄油(每个烤盘喷2-3次),然后把茄子片排列在烤盘上。
3 在表面轻轻刷上或喷上橄榄油,淋上蜂蜜,撒上百里香,翻拌均匀后放进烤箱烤20分钟,每隔5分钟翻面一次。
4 把一半分量的薄荷叶切碎,与优格和大蒜一起放进碗里。把茄子盛盘,撒上辣椒粉、剩余的薄荷和少许蜂蜜(可选),搭配优格蘸酱一起享用即可。
小贴士:如果没有粗玉蜀黍面,可以用额外的1大匙面粉代替。
Baked Aubergine Chips with Honey and Thyme
Ingredients
25g plain flour
25g polenta
2 aubergines, sliced into chips
olive oil for greasing
3 tbsp clear honey, plus extra to serve (optional)
6 thyme sprigs, leaves picked
15g fresh mint
100g 0% fat Greek-style yogurt
½ garlic clove, crushed
cayenne pepper to serve
Method
1 Preheat oven to 200°C (or fan 180°C). Combine flour, polenta and some seasoning in a large bowl. Toss aubergine through mixture until evenly coated.
2 Line 2 baking trays with nonstick baking paper and lightly brush or spray with olive oil (2-3 sprays on each tray), then put aubergine on the trays.
3 Lightly brush or spray aubergine with oil, then drizzle with honey and scatter over thyme. Toss to coat, then bake for 20mins, flipping aubergine every 5mins.
4 Finely chop half of mint leaves and combine in a bowl with yogurt and garlic. Transfer aubergine to a plate and sprinkle with cayenne pepper, the remaining mint and a drizzle of honey, if you like. Serve with yogurt dip.
Tip: If you haven’t got any polenta, swap it for an extra 1 tbsp plain flour instead.
