粉红母亲节食谱

粉红派对杯蛋糕
材料
无盐牛油115克,室温
细砂糖200克
香草精1½小匙
大型鸡蛋2个,室温
通用面粉1½杯
泡打粉2小匙
柠檬果皮碎1大匙
白脱牛奶120毫升
柠檬汁60毫升
装饰糖霜
无盐牛油345克,室温放软
糖粉650克,过筛
牛奶80毫升
香草精2小匙
盐少许
粉色系食物色素少许
新鲜覆盆子适量
可食用金色糖豆适量
做法
1 风扇模式下预热烤箱至170°C。把杯蛋糕纸托排列在一个大型烤盘中,放置待用。
2 把牛油和细砂糖倒进装有搅拌桨的KitchenAid立式搅拌机中,用中速搅拌混合均匀至松白。
3 加入香草精,并分2次加入鸡蛋,不断搅打至混合均匀。
4 把搅拌机调至低速,慢慢加入面粉和泡打粉,搅拌至刚好混合均匀,小心不要过度搅拌。
5 加入柠檬果皮碎、果汁和白脱牛奶,再次慢慢搅拌至完全混合均匀。
6 用勺子把面糊盛进纸托,填满三分之一,放进烤箱烤25分钟成浅金色,用叉子测试无面糊残留。
7 从烤箱中取出,放在线形架上放凉。
8 准备糖霜:把牛油和糖粉放进装有搅拌桨的搅拌机中,用低速混合至拌匀后调高速度至中速继续搅拌。
9 加入香草精和少许盐,然后慢慢倒进牛奶,如果质地太稀,再加一点糖粉。
10 把糖霜分装在3个碗中,加入食用色素,调出三种不同的颜色。
11 在三个挤花袋上分别装上不同形状的大号挤花嘴,各填充一种颜色的糖霜,用不同的挤花来装饰杯蛋糕。
12 缀以新鲜覆盆子和可食用的金色糖豆即可。
Party cupcakes
Ingredients
115g unsalted butter, at room temperature
200g caster sugar
1½tsp vanilla extract
2 large eggs, at room temperature
1½ cups all purpose flour
2 tsp baking powder
1 tbsp lemon zest
120ml butter milk
60ml lemon juice
Frosting and Decorations
345g unsalted butter, softened to room temperature
650g icing sugar, sifted
80ml milk
2 tsp vanilla extract
pinch of salt
pink food colouring in different tones
fresh raspberries to decorate
gold edible cake decorations
Method
1 Preheat oven to 170°C fan forced. Place the cup cake patties into a large muffin tray and set aside.
2 Combine butter and caster sugar into the bowl of a KitchenAid stand mixer with the flat beater attached. Mix on medium speed until light and fluffy.
3 Add vanilla extract and one egg at a time, beating in-between until combined.
4 Turn the mixer down low and slowly add plain flour and baking powder until it is just combined. Be careful not to over mix.
5 Add lemon zest, juice and butter milk and slowly beat again until just combined.
6 Spoon batter into the patties, filling them a third of the way. Place in the oven to bake for 25mins or until they are lightly golden, and a skewer comes out clean when tested.
7 Remove from the oven and place on a cooling rack to cool down.
8 To prepare frosting, combine butter and icing sugar into the bowl of a KitchenAid stand mixer with the beater paddle attached. Mix on low speed to start with then turn up to medium speed once the ingredients are combined.
9 Add vanilla and a pinch of salt. Slowly add in milk, and if frosting is too runny add a little more icing sugar.
10 Divide frosting between 3 bowls and add food colouring to create three different tones of colour.
11 Attach different large piping nozzles to three piping bags, and fill each one with a frosting colour. Pip cupcakes in a variety of different piping techniques (rose swirls, little roses and swirl lines).
12 Finish off the decoration with fresh raspberries and edible gold cake decorations.
