茶叶蛋

材料
鸡蛋6个
普洱茶叶2大匙
肉桂棒1个
八角1个
丁香2个
五香粉¼小匙
酱青3大匙
糖½小匙
清水2杯

做法
1 在中型汤锅中倒入适量清水后煮滚,轻轻放进鸡蛋,继续煮滚7分钟。
2 把煮熟的鸡蛋取出,用冷水冲洗干净。
3 用汤匙背面轻轻敲击鸡蛋,把蛋壳敲出裂纹。
4 把鸡蛋放回有水的汤锅中,加入剩余材料。
5 把水煮滚后立刻调成小火。
6 焖煮至少1小时(时间越长,味道越好),如有需要可以加水。
7 把茶叶蛋留在卤汁中过夜,风味更佳。

Tea Leaf Eggs

Ingredients
6 eggs
2 tbsp Chinese pu-erh tea leaf
1 cinnamon stick
1 star anise
2 cloves
¼ tsp Chinese five-spice powder
3 tbsp soy sauce
½ tsp sugar
2 cups water

Method
1 Add water to a medium pot and bring it to a boil. Gently drop in eggs and boil for 7mins.
2 Remove hard-boiled eggs and rinse them with cold water.
3 Using the back of a spoon, gently tap the eggshell to crack the shell.
4 Return eggs to water and add the remaining ingredients.
5 Bring water to a boil and immediately turn the heat to low.
6 Simmer for at least 1hr (the longer the simmering, the better the taste). Add more water if needed.
7 Leave eggs in the brine overnight to enhance the flavour.
