法式烤鸡

材料
味噌紫菜牛油
泰式红咖喱酱50克
椰浆200克
鸡汤200克
泰式罗勒叶10克
奇异果240克
混合藜麦100克
清水200克
羽衣甘蓝150克
枸杞15克
盐和胡椒适量

做法
1 准备烤鸡:轻轻揉松表皮,把牛油涂抹按压在鸡肉上,用剩余牛油和适量盐和胡椒粉在表皮揉均匀。
2 放入预热好的烤箱,用200°C烤15分钟,把温度调低至175°C,继续烤30分钟至(时长因烤箱和鸡只大小而异)。
3 把羽衣甘蓝切碎后拌入芝麻沙拉酱和枸杞,放置待用。
4 把藜麦放在盛水的锅中,中火煮15分钟或按照包装上的指示煮熟,最后用盐和胡椒调味,放置待用。
5 准备泰式红咖喱:把红咖喱酱稍微炒香,转小火,加入椰浆和鸡汤炖煮10分钟,加入泰国罗勒和100克奇异果丁。
6 准备奇异果沙拉:把2种奇异果切成1厘米或更小的小块,搅拌均匀。
7 把烤鸡盛盘,然后在每个小盘中分盛煮好的藜麦、羽衣甘蓝沙拉和适量红咖喱,最后放上奇异果沙拉即可。

Whole Roasted French Yellow Chicken

Ingredients
20g miso seaweed compound butter
50g Thai red curry paste
200g coconut cream
200g chicken stock
10g Thai basil
240g kiwifruit
100g mix color quinoa
200g water
150g kale
15g goji berries
salt and pepper to taste

Method
1 Start to prepare chicken by gently loosening the skin. Massage compound butter onto chicken under skin. Massage the exterior with any remaining butter and generously salt and pepper.
2 Place in preheated oven at 200°C for 15mins then lower the temperature to 175°C, continue to roast for 30mins or until cooked(times vary from oven to oven and chicken size).
3 Cut kale in chiffonade and toss with sesame dressing and goji berries. Set aside.
4 Raise quinoa and place in a pot with water. Cook over moderate heat for 15mins or as directed by the package and finish with salt and pepper to taste. Set aside.
5 Prepare Thai red curry: Lightly fry red curry paste until fragrant.
Lower heat, add coconut cream and chicken stock, and simmer for 10mins. Add Thai basil and 100 grams of diced kiwi.
6 Prepare kiwi salsa: Dice green and SunGol kiwifruit into 1cm or smaller squares and toss together.
7 Plate main course by presenting whole chicken to the table. Serve each plate quinoa, kale salad, and a very generous portion of red curry topped by the fresh kiwifruit salsa.
