巧克力甜菜根蛋糕

材料

砂糖100克
牛油100克,软化
无麸质面粉或普通面粉200克
白脱牛奶120克
苏打粉½小匙
盐少许
无盐牛油225克
盐¼小匙
浓奶油4大匙
甜菜根250克
红蔗糖100克
可可粉50克
大型鸡蛋2个
香草酱1小匙
泡打粉¼小匙
黑巧克力片100克
糖粉500克
香草荚酱1大匙

做法

  1. 预热烤箱至170°C。
  2. 在2个8寸可拆卸蛋糕模中上油并铺好烘焙纸。
  3. 把甜菜根沥干搅碎,保留2大匙用于奶油霜。
  4. 把牛油和糖放进装好配件的立式搅拌机碗中,中速搅打约3-5分钟至松白,然后每次一个加入鸡蛋,每加入一个鸡蛋搅打1分钟,最后加入甜菜根泥和香草酱,搅拌至完全混合均匀。
  5. 把面粉、可可粉、苏打粉、泡打粉和盐搅拌均匀,把一半混合物加入牛油鸡蛋混合物,低速搅拌均匀,然后慢慢加入白脱牛奶。
  6. 加入剩余的面粉混合物和巧克力片,中速搅拌至所有材料都混合均匀。
  7. 把混合物倒进准备好的蛋糕模,用刮刀轻轻抹平,放进烤箱烤40分钟至插进蛋糕中心的刀拔出时没有残留。放凉5分钟后脱模,放在冷却架上完全冷却。
  8. 准备奶油霜:把牛油放进装好配件的立式搅拌机碗中,中速搅拌几分钟至牛油软化,把糖粉筛进搅拌碗,轻轻搅拌均匀。
  9. 加入香草荚酱、盐和2大匙奶油,搅拌2-3分钟成蓬松的奶油状,有需要可多加入适量奶油。
  10. 把剩余的甜菜根泥拌入奶油霜中,装饰在蛋糕上即可。

Chocolate Beetroot Cake with Pink Beetroot Frosting

Ingredients

100g caster sugar
100g butter, softened
200g gluten-free flour or plain flour
120g buttermilk
½ tsp bicarbonate of soda
a pinch of salt
225g soft unsalted butter
¼ tsp salt
4 tbsp double cream
250g beetroot
100g dark brown sugar
50g cocoa powder
2 large eggs
1 tsp vanilla paste
¼ tsp baking powder
100g dark chocolate chips
500g icing sugar
1 tbsp vanilla bean paste

Method

  1. Preheat oven to 170°C.
  2. Grease and base line two 8 inch sandwich tins.
  3. Drain and grate beetroot. Set 2 tbsp aside to use for frosting.
  4. Place butter and sugars into the bowl of KitchenAid Artisan Stand Mixer, fitted with the paddle attachment and mix together on a medium speed until pale and fluffy, about 3-5mins. Beat in eggs, one at a time, beating for 1 minute after adding each egg. Then beat in grated beetroot and vanilla paste until thoroughly combined.
  5. In a separate bowl, whisk together flour, cocoa powder, bicarbonate of soda, baking powder, and salt. Add half of dry ingredients to butter and egg mixture, beating on a low speed, and then slowly add buttermilk.
  6. Then add the other half of dry ingredients and chocolate chips. Beat on medium speed until all ingredients are just incorporated.
  7. Pour mixture into prepared sandwich tins and smooth out gently with a palette knife. Bake for 40mins, or until a sharp knife comes out clean. Let cool for 5mins, then remove cakes from tins and set on a cooling rack. Let cakes completely cool.
  8. To make frosting, place butter into the bowl of KitchenAid Artisan Stand Mixer, fitted with the paddle attachment and mix on a medium speed for a couple of minutes until really soft. Sieve in icing sugar and gently mix to combine.
  9. Add vanilla, salt, and 2 tbsp of cream and beat for 2-3mins until it is whipped, fluffy, and creamy, add more cream if it seems to need it.
  10. Mix reserved grated beetroot into frosting and use this to sandwich the cake together and decorate the top.
