德国式牛油蛋糕

酵母面团

面粉375克
干酵母1支
糖75克
盐1撮
温热的牛奶150毫升
软化的牛油75克
鸡蛋1个

配料

牛油100克
接骨木糖浆或青柠糖浆4大匙
糖100克
切碎的杏仁或杏仁片100克

做法

  1. 准备酵母面团:把粉和酵母在搅拌碗中混合均匀,然后加入剩余材料,用食品处理机搅拌约10分钟,然后放在温暖的地方发酵至体积翻倍。
  2. 把烤盘上油,放上面团擀平,用叉子均匀戳出小洞,加盖再次发酵。
  3. 把牛油和糖浆混合均匀,用小勺子把混合物涂在擀好的面团上,撒上一半糖,然后把杏仁和剩余的糖拌匀,一起撒在表面。
  4. 把托盘插入烤箱的第3层,转到顶部和底部同时加热模式,用170°C烤20-25分钟即可。

German-Style Butter Cake

Yeast Dough

375g flour
1 sachet dried yeast
75g sugar
1 pinch salt
150ml lukewarm milk
75g soft butter
1 egg

Topping

100g butter
4 tbsp elderberry syrup or lime syrup
100g sugar
100g chopped almonds or flaked almonds

Methods

  1. Prepare yeast dough: Mix flour and yeast in a bowl. Add the rest of ingredients and knead mixture well for around 10mins in food processor. Allow dough to prove in a warm place until the volume has doubled.
  2. Grease a baking tray and roll out dough onto it. Prick several times with a fork, cover and allow it to prove again.
  3. Mix butter with syrup. Distribute butter mixture over the rolled-out dough using a small spoon. Sprinkle half of sugar first before tossing almonds together with the remaining sugar over the surface.
  4. To bake, insert the tray in the level 3 of the oven. Bake with Top/bottom heating at 170°C for 20-25mins.
