叁峇青柠汁牛肉蔬菜沙拉

材料
冷藏牛肉300棵,切2块
芫荽籽10克
孜然10克
姜黄粉5克
香茅20克
蒜头50克
红葱头30克
芫荽叶10克
干辣椒5克
盐½小匙
糖½小匙
黑胡椒½小匙
清油100毫升

马来西亚沙拉
青芒果100克,切长丝
香蕉花心100克,汆烫切片
红葱头20克,切片
火炬姜花10克,切薄片
长豆10克,切丁
番茄50克,切片
红辣椒10克,切细圈
芫荽叶5克,切碎
香茅20克,切薄片

沙拉酱汁
鱼露40克
红辣椒30克,切细圈
指天椒20克,切圈
虾酱30克
罗望果汁200克
干椰丝80克
棕榈糖80克
青柠汁50克

做法
1.中火预热平底锅,加入适量清油,加入芫荽籽、孜然、香茅、红葱头、蒜头、芫荽叶和干辣椒炒香,然后倒进食品处理机,加入姜黄粉、盐、糖和黑胡椒,搅拌成糊状。
2.把牛肉块用混合好的香料糊均匀裹上一层,放进冰箱冷藏腌味。
3.准备沙拉酱汁:把鱼露、辣椒、虾酱、罗望果汁、干椰丝、棕榈糖和青柠汁混合均匀。
4.用大火在平底锅中加热适量清油,把牛肉一面煎香3-4分钟,再翻面继续煎香3-4分钟。
5.牛肉煎好后放置2分钟,然后切片,把牛肉片和沙拉以及酱汁一起拌匀,可以搭配白饭享用。

Local Style Beef Salad with Vegetables Tossed with Homemade Sambal Chilli and Lime Juice

serves 4

Ingredients
300g chilled beef, cut into 2 pieces
10g coriander seed
10g cumin seed
5g turmeric powder
20g lemongrass
50g garlic
30g shallots
10g coriander leaves
5g dried chili
½ tsp salt
½ tsp sugar
½ tsp black pepper
100ml cooking oil

Kerabu Salad
100g young mango, cut into long julienne
100g banana flower hearts, boiled and sliced
20g shallots, sliced
10g torch ginger, sliced thinly
10g long beans, small dice
50g tomato, sliced
10g red chili, sliced finely
5g coriander leaves, sliced
20g lemongrass, sliced thinly

Kerabu Sauce
40g fish sauce
30g red chili, sliced fine
20g bird’s eye chili, sliced
30g prawn paste
200g tamarind juice
80g desiccated coconut
80g palm sugar
50g lime juice

Method
1.Pre-heat a pan with some cooking oil over medium heat and stir-fry coriander seed, cumin seed, lemongrass, shallots, garlic, coriander leaves and dried chili until fragrant. Transfer into a food processor, add turmeric powder, salt, sugar and black pepper, blend together to make a paste.
2.Coat beef pieces with blended mixture and leave in a refrigerator to marinate.
3.To prepare kerabu sauce, mix fish sauce, all chillies, prawn paste, tamarind juice, desiccated coconut, palm sugar and lime juice.
4.Pre-heat a pan over high heat with some cooking oil, sear beef on one side for 3-4mins and turn to the other side to sear for another 3-4mins.
5.When beef pieces are cooked, rest it for 2mins before slicing. Toss sliced beef with kerabu salad and sauce. Serve with steamed fragrant rice.
