乡村牧羊人馅饼

材料

牛或羊肩肉1公斤,切丁
棕色洋葱1个,切丁
蒜头2瓣,切碎
胡萝卜2根,切丁
西芹2根,切丁
番茄酱2大匙
干牛至叶2小匙
新鲜百里香或迷迭香2-3枝
番茄丁罐头400克
樱桃番茄250克,四等份
鸡肉或牛肉高汤粉1小匙(或1块)
海盐和胡椒少许
冷冻豌豆¹/3杯

马铃薯泥

白马铃薯6-8个,去皮切块
清水适量
牛油1½大匙
奶酪1½杯,切丝
牛奶1杯
干牛至叶1小匙
盐和胡椒少许
新鲜迷迭香2-3枝

做法

  1. 把马铃薯放进一个大型深平底锅中,加入清水至半满,加盖用中火至高温下,煮至熟软,可以轻松插入叉子的程度,倒干清水,把马铃薯放回空锅中。
  2. 加入牛油和一半牛奶,用压泥器挤压至马铃薯变得柔滑,加入剩余的牛奶、奶酪、干牛至和少量海盐,继续挤压混合均匀。
  3. 将绞肉机附件和和中型研磨盘装置在KitchenAid搅拌机上,把速度设置为4档,加入切块的牛肉或羊肉绞成肉馅。
  4. 把一个大型烤箱用厚底煎锅或铁铸锅加热到中高温,加入洋葱丁和蒜头翻炒几分钟至洋葱开始变得半透明。加入切块的胡萝卜和西芹,继续翻炒5-8分钟至蔬菜开始变软。
  5. 加入番茄酱继续煮几分钟,然后加入香草、罐装番茄丁、新鲜番茄、高汤粉和少许盐拌匀,转中小火煮10分钟后关火,拌入冷冻豌豆。
  6. 把马铃薯泥舀在肉末馅上。用叉子在顶层划出凹凸纹路,撒上少许磨碎的奶酪,均匀撒上新鲜迷迭香。
  7. 放入烤箱,用180°C烘烤30分钟至表面金黄微脆即可。

Rustic Shepherds Pie

Ingredients

1 kg beef or lamb shoulder cut, cubed
1 brown onion, diced
2 garlic cloves, minced
2 carrots, diced
2 celery sticks, diced
2 tbsp tomato paste
2 tsp dried oregano
2-3 sprigs of fresh thyme or rosemary
400g can diced tomatoes
250g cherry tomatoes, quartered
1 tsp chicken or beef stock powder (or 1 cube)
pinch sea salt and pepper
¹/3 cup frozen peas

Potato Mash

6-8 white potatoes, peeled and diced
water for boiling
1½ tbsp butter
1½ cup tasty cheese, shredded
1 cup milk
1 tsp dried oregano
good pinch salt and pepper
2-3 fresh rosemary sprigs

Method

  1. Add peeled and diced potatoes to a large deep saucepan, fill half full with water. Place on medium to high heat with a lid on, boil potatoes until they are soft when pricked with a fork. Drain and place back in the pot.
  2. Add butter and half of milk, using a masher mash the potatoes until they are smooth. Add the remaining milk, cheese, dried oregano and good pinch of sea salt and mash through.
  3. Attach the meat grinder attachment to KitchenAid mixer, with the medium grinding plate. Turn the mixer to speed 4 and feed cubed beef or lamb through the grinder and set aside.
  4. Heat up a large oven proof heavy base fry pan with deep sides or a casserole dish to medium high heat. Add diced onion and garlic, sauté for a few minutes while stirring until onions start to become translucent. Add diced carrot and celery, sauté further for 5-8mins or until vegetables start to become soft.
  5. Stir in tomato paste and allow to cook for a further few minutes before adding in herbs, the can of diced tomatoes, fresh tomatoes, stock powder and a good pinch of salt. Stir through, turn down to medium heat and allow to simmer for 10mins. Remove from the heat and stir through frozen peas.
  6. Spoon mashed potatoes over the top of mince filling. Using a fork fluff up the top layer. Sprinkle over a little extra grated cheese and place fresh rosemary sprigs on top.
  7. Bake in an oven at 180°C for 30mins or until golden and crispy on the top.
