姜葱炒啦啦

材料
花蛤(啦啦)350克
蒜茸10克
姜片5片
洋葱片10克
料酒少许
青葱2棵(切段)
生粉少许

调味料
清水250毫升
蚝油1小匙
胡椒粉½小匙
糖½小匙
黑酱油1小匙

做法

  1. 把啦啦用滚水煮至壳张开,捞起沥干待用。
  2. 加热少许清油,把蒜茸、姜片和洋葱炒香,加入料酒和啦啦翻炒均匀。
  3. 混合调味料,加入锅中翻炒均匀。
  4. 加入青葱段翻炒均匀后,用生粉勾芡即可。

 

Ginger Fried Hard Clam

Ingredients
350g hard clams (lala)
10g minced garlic
5 ginger slices
10g sliced onion
some cooking wine
2 stalks spring onion (cut into sections)
some starch

Seasoning
250ml water
1 tsp oyster sauce
½ tsp pepper powder
½ tsp sugar
2 tsp dark soy sauce

Method

  1. Cook hard clams in boiling water till shells open. Drain and set aside.
  2. Heat up oil in a wok. Saute minced garlic, ginger slices and sliced onion till fragrant. Add in cooking wine and hard clams. Toss well.
  3. Mix Seasoning and add in the wok. Toss well.
  4. Add spring onion and stir well. Thicken the gravy with starch and serve.
