牛肉马铃薯酿豆腐

材料

冷冻牛肉碎250克
方形豆干10块
马铃薯150克,切块
洋葱50克,切丁
芫荽15克,切碎
长豆30克,切碎
红辣椒20克,切碎
干红葱头10克
盐½小匙
糖½小匙
白胡椒粉½小匙
油炸用清油500毫升

炸衣

生粉20克
鸡蛋3个,打散

蘸酱

蒜头50克,切碎
红洋葱30克,切碎
印尼甜酱油150克

做法

  1. 准备馅料:把马铃薯煮或蒸10分钟后捣碎待用。用中火预热平底锅,加入适量清油,把白洋葱加热3分钟,然后加入牛肉煮熟。把马铃薯、牛肉、芫荽、长豆和红辣椒混合均匀,用盐、胡椒和白胡椒调味,放置待用。
  2. 用刀把豆干挖洞,用马铃薯牛肉馅填满。把打好的鸡蛋与生粉混合待用。
  3. 准备蘸酱:在平底锅中加入少许清油,中火加热,把洋葱和蒜头炒香3-4分钟,然后和甜酱油混合均匀。
  4. 把豆干浸入鸡蛋生粉混合物中,油炸2-3分钟至金黄色,然后沥干多余的油,搭配蘸酱享用即可。

Deep-dried Hard Tofu, Stuffed with Minced Beef and Potato, Served with Spicy and Sweet Chilli Dip

Ingredeints

250g chilled beef mince
10 hard dry tofu (square shape)
150g potato, small cubes
50g white onion, small dice
15g Chinese parsley, chopped
30g long bean, chopped
20g red chili, chopped
10g dried shallot
½ tsp salt
½ tsp sugar
½ tsp white pepper
500ml cooking oil for deep frying

Coating

20g corn flour
3 egg, beaten

Sweet Sauce Dip

50g garlic, chopped
30g red onion, chopped
150g sweet sauce (kicap manis)

Method

  • To make fillings: Boil or steam potato for 10mins, mash and set aside. Pre-heat a skillet with some cooking oil over medium heat, sweat white onion for 3mins and add beef until it is cooked. Mix together mashed potato, cooked beef, Chinese parsley, long beans and red chili, season with salt, pepper and white pepper. Set aside.
  • Using a paring knife, core a hole inside hard tofu and fully fill it with mashed potato and beef filling. Mix beaten egg with corn flour and set aside.
  • To prepare spicy sweet chili dip: Pre-heat skillet with a little oil over medium heat and sweat onion and garlic for 3-4mins. Blend it with sweet sauce.
  • Dip hard tofu into corn flour and egg mixture and deep fry it in a hot cooking oil wok or deep fryer for 2-3mins until golden brown. Once cooked, drain excess oil and serve with spicy sweet chili dip.
