迷你金瓜派

材料

面粉3¾杯
砂糖3大匙
粗盐1¾小匙
无盐牛油1½杯
白醋3大匙
冰水3大匙
罐装金瓜泥425克
黑糖¼杯
肉桂粉¾小匙
姜茸½小匙
五香粉¼小匙
肉豆蔻粉¼小匙
香草精½小匙
奶油芝士120克,切小块
大型蛋黄2个
打好的鸡蛋1个

做法

  1. 在食品处理机中混合面粉、砂糖和 1½小匙盐,然后拌入牛油中直到混合物变成粗粒状。
  2. 加入醋和冷水,继续搅拌至面团成型但表面依然有碎屑的状态,不要过度混合。把面团分成3块,做成1寸厚的圆形,用保鲜膜紧紧包好,冷藏1小时至2天至变硬。
  3. 与此同时,在小型汤锅中把金瓜、黑糖、香料和剩余的盐搅拌均匀,用中火加热6-8分钟,偶尔搅拌。关火后加入香草和奶油芝士拌匀,然后拌入蛋黄,盛入碗中放置冷却。
  4. 把烤箱预热至190°C,拿出一块圆型面团,在撒了少许面粉的案板上,把圆形面团卷成1/8寸厚的,用饼干模切出3.5寸的南瓜灯笼形状,放进冰箱中冷藏。
  5. 把其中7片放在铺好烘焙纸的烤盘上作为馅饼底部,在剩余的面皮上每片切3条垂直切口。把2大匙馅料放在每个馅饼底部面皮上,留下约½寸的边缘,轻轻刷上蛋液,盖上有切口的面皮,并用叉子按压边缘密封好。重复该步骤,用完剩余的面皮和馅料。
  6. 用剩下的蛋液刷在馅饼表面,放进烤箱烤23-25分钟至金黄色即可。

Pumpkin Hand Pies

Ingredients

3¾ cups all-purpose flour
3 tbsp granulated sugar
1¾ tsp kosher salt
1½ cups unsalted butter
3 tbsp white vinegar
3 tbsp ice-cold water
425g canned pumpkin puree
¼ cup dark brown sugar
¾ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground allspice
¼ tsp ground nutmeg
½ tsp pure vanilla extract
120g cream cheese, cut into small pieces
2 large egg yolks
1 beaten egg for brushing

Method

  1. In a food processor, combine flour, granulated sugar and 1½ tsp of salt. Pulse in butter until the mixture resembles coarse crumbs.
  2. Add vinegar and cold water, pulsing until dough is crumbly but holds together when squeezed. Do not over mix. Shape dough into 3 1-inch-thick disks, cover tightly in plastic wrap and refrigerate at least 1hr and up to 2 days until firm.
  3. Meanwhile in a small saucepan, whisk together pumpkin, brown sugar, spices and the remaining ¼ tsp of salt. Cook over medium-heat, stirring occasionally, to cook 6-8mins. Remove from heat, mix in vanilla and cream cheese until fully incorporated, then mix in egg yolks. Transfer to a bowl and let cool.
  4. Heat oven to 190°C. Working one disk at a time, on a lightly floured surface, roll the disks to 1/8-inch-thick. Cut out 3.5” pumpkin shapes, transferring them to the refrigerator.
  5. Place 7 pumpkin cutouts as bottom on a parchment-lined baking sheet. Cut 3 vertical slits in remaining cutouts. Place 2 tbsp of pumpkin mixture onto each bottom, leaving a ½-inch border around the edges. Lightly brush the border with egg. Sandwich filling with scored pumpkin cutouts and press the edges with a fork to seal. Repeat with remaining cutouts and pumpkin mixture.
  6. Brush tops of pies with remaining egg. Bake for 23-25mins until golden brown.
