材料

牛油50克
洋葱2个,切片
大型英国马铃薯425克,切片
新鲜百里香3枝
新鲜蔬菜高汤500毫升
高脂牛奶或鲜奶油125毫升
切碎的新鲜香草2大匙(例如细香葱、莳萝和欧芹)
成熟的爱尔兰切达干酪125克,磨碎
盐和现磨黑胡椒少许

做法

  1. 在大平底锅中融化牛油,然后加入洋葱和马铃薯片、少许盐和百里香,轻轻翻拌均匀至裹好牛油。加盖焖煮5分钟至蔬菜变软但还未变色。
  2. 加入高汤和500毫升热水,煮滚后部分加盖焖煮10分钟至马铃薯熟软。
  3. 去掉百里香,把汤用搅拌机搅打至柔滑,重新加热,加入牛奶或鲜奶油和切碎的香草。趁热撒上磨碎的奶酪即可。

Creamy potato & garden herb soup with melting Irish Cheddar

Ingredients

50g butter
2 onions, sliced
425g Maris Piper potatoes, sliced
3 sprigs fresh thyme
500ml fresh vegetable stock
125ml creamy milk or crème fraiche
2 tbsp freshly chopped herbs(e.g. chives, dill and parsley)
125g mature Irish cheddar cheese, grated
salt & freshly ground black pepper

Method

  1. Melt butter in a large saucepan then add onion and potato, a pinch of salt and thyme, coating well with butter. Cover tightly and cook gently for 5mins to soften but not colour vegetables.
  2. Stir in stock together with 500ml hot water, bring to the boil then part-cover and simmer for 10mins or until potato is tender.
  3. Remove thyme. Blend soup until smooth then return to the heat. Stir in milk or crème fraiche and chopped herbs. Serve piping hot, sprinkling each bowlful with grated cheese.
