面团

紫薯粉25克
低筋面粉190克
无盐牛油100克
糖粉45克
蛋液15克
淡奶油10克
椰浆10克

紫薯馅

去皮紫薯240克
牛油10克
砂糖30克
淡奶油10克

做法

  1. 准备紫薯馅:把紫薯煮熟,用叉子压成泥,加入糖、牛油和淡奶油拌匀(如果混合物不够浓稠,可用少量淀粉勾芡),分成20克的小块,揉成小球,放进冰箱冷藏待用。
  2. 制作面团:把软化的牛油与过筛的糖粉混合均匀,加入蛋液、淡奶油和椰浆拌匀。加入过筛的低筋面粉和紫薯粉,揉成面团,用保鲜膜包好,冷藏至少1小时。
  3. 把面团分成28克的小块,揉成小球,用手掌压平。把紫薯馅放在压平的面团上,用面团把紫薯馅裹好,轻轻搓成球状。
  4. 把面团放进印模(内部抹少许菜籽油便于脱模),每次一个让月饼成型。盖上保鲜膜冷冻1小时以上。
  5. 用200°C预热空气炸锅10分钟,把月饼放进炸锅前适量喷水,用200°C烤4分钟,然后转到180°C继续烤2分钟。
  6. 把月饼连烤盘一起取出,在月饼表面刷上适量糖浆,继续烤1分钟,然后把月饼转移到盘子上即可。

Purple Sweet Potato Mooncakes

Dough

25g purple potato powder for baking
190g cake flour
100g unsalted butter
45g icing sugar
15g egg wash
10g whipping cream
10g coconut milk

Sweet Potato Filling

240g peeled purple sweet potatoes
10g butter
30g granulated sugar
10g whipping cream

Method

  1. Make sweet potato filling: Cook sweet potatoes and mash with fork. Add sugar, butter and whipping cream (If the mixture is too watery, thicken it with a small amount of starch). Divide into 20g pieces and roll into balls. Chill in refrigerator for later use.
  2. Make dough: Mix softened butter with sieved icing sugar. Stir in egg wash, whipping cream and coconut milk. Add sifted cake flour and purple potato powder and knead mixture. Wrap with cling film and refrigerate for at least 1hr.
  3. Divide pastry dough into portions of 28g each. Roll each into a small ball and flatten out with your palm. Place a portion of sweet potato filling on a piece of flattened dough. Wrap dough around sweet potato ball. Seal dough and softly roll it into a ball.
  4. Put a ball into stamp mould (lightly greased inside with vegetable oil for easy release), one at a time. Press to release mooncakes. Cover with cling film and refrigerate for more than 1hr.
  5. Preheat Airfryer at 200°C for 10mins. Spray water on mooncakes before placing them on the baking tray. Bake at 200°C for 4mins, and then bake at 180°C for 2mins.
  6. Remove baking tray along with mooncakes. Brush on syrup and bake for 1min. Place mooncakes on a plate and serve.
