奶酥

面粉(或自发粉)2杯
盐¼小匙
泡打粉¾小匙(如果用自发粉可省略)
细砂糖¾杯
无盐牛油170克,切成小块
香草精1½小匙
大型蛋黄2个
醋1小匙

浆果馅

新鲜俄勒冈或华盛顿蓝莓420克
柠檬1个,磨果皮碎
柠檬½个,挤汁
白糖¹/3杯
玉蜀黍生粉2小匙

做法

  1. 烤箱预热至190°C。
  2. 在大型搅拌碗中,混合面粉、盐、泡打粉和砂糖,用打蛋器搅打均匀。
  3. 把冷牛油加入面粉混合物中,翻拌均匀。
  4. 加入蛋黄、香草精,用叉子把混合物搅拌均匀。
  5. 当混合物呈现干砂土的状态时,淋上醋,继续搅拌约30秒。
  6. 加入牛油,用指尖捏碎拌匀,直到混合物呈现湿沙土的状态,放置待用。
  7. 把蓝莓和其他浆果馅材料混合搅拌均匀。
  8. 把一半奶酥铺在深烤盘中,用勺子或刮刀背面用力按压均匀。
  9. 把浆果馅均匀铺在烤盘中的奶酥上。
  10. 把剩余的奶酥盖在浆果馅上,把其中一些奶酥稍微捏成较大的团状,让外观更好看。
  11. 用190°C烤40-45分钟至表面呈金黄色。
  12. 冷却约1小时左右即可。

Easy Baked Blueberry Crumble

Crumble

2 cups all-purpose flour (or self-rising flour)
¼ tsp salt
¾ tsp baking powder (omit if using
self-rising flour)
¾ cup caster sugar
170g unsalted butter, cut into small cubes
1½ tsp vanilla extract
2 large egg yolks
1 tsp vinegar

Berry filling

420g fresh Oregon or Washington blueberries
1 lemon, zest
½ lemon, juice
¹/3 cup white sugar
2 tsp cornstarch

Method

  1. Preheat oven at 190°C.
  2. In a large bowl, combine flour, salt, baking powder, sugar and mix well with a balloon whisk.
  3. Add cold butter into the flour mixture and fold into the flour.
  4. Add in egg yolks, vanilla extract and use a fork to incorporate the ingredients.
  5. Once the mixture looks like dry sand, drizzle in vinegar and continue to mix for about 30 seconds.
  6. Using hands and rub butter between fingertips until it resembles wet sand. Set it aside.
  7. When the crumble is ready, combine blueberries and the rest of ingredients for the filling together in a large bowl, mix well.
  8. Transfer half of crumble into an oven proof deep dish, press down firmly and evenly with the back of a spoon or spatula.
  9. Place berry filling into the dish and distribute them evenly.
  10. Cover the top with remaining crumble, grabbing some dough and pinching some together to resemble large clusters. This will create additional texture and appearance.
  11. Bake at 190°C for 40-45mins or until the top is golden brown.
  12. Allow to cool for about 1hr before serving.
