材料

原味厚卷饼3片
全麦厚卷饼3片
椰浆150毫升
鱼露1大匙
椰糖1大匙
清油1大匙
紫甘蓝100克,切碎
生菜100克
香料酱
蒜头4瓣
红葱头3个
2厘米生姜1块
干辣椒6个,浸泡
香茅2棵
新鲜红辣椒2个
蜡豆或澳洲坚果5颗
姜黄粉⅓小匙
虾酱½小匙
葱油2大匙
鱼露1½大匙

肉丸

鸡肉碎500克
日式面包糠50克
牛奶100毫升
烟熏辣椒粉1小匙
盐½小匙
胡椒½小匙
油炸用的清油½杯

做法

  1. 混合除清油外所有肉丸材料,腌味30分钟,捏成一口大小的肉丸。
  2. 在平底锅中,用中火加热½杯油,把肉丸煎至金黄,放置待用。
  3. 用搅拌机把香料酱材料一起搅打至柔滑。
  4. 中火加热1大匙清油,把香料酱炒香,加入椰浆、鱼露和椰糖,一起煮2分钟。
  5. 加入煎好的肉丸,搅拌均匀至肉丸裹上酱料。
  6. 按照包装指示加热两种厚卷饼,把饼切半,打开开口。
  7. 把甘蓝和生菜丝放进卷饼中,放上咖喱肉丸即可。

Curry Chicken Meatball Pita

Ingredients

3 Plain Pita
3 Wholemeal Pita
150ml coconut milk
1 tbsp fish sauce
1 tbsp gula melaka
1 tbsp oil
100g purple cabbage, shredded
100g lettuce
Spice Paste
4 garlic cloves
3 shallots
2cm ginger
6 dried chilli, soaked
2 lemongrass
2 fresh red chilli
5 candlenut or macadamia nuts
⅓ tsp turmeric powder
½ tsp dried shrimp paste
2 tbsp shallot oil
1½ tbsp fish sauce

Meatball

500g minced chicken
50g panko breadcrumbs
100ml milk
1 tsp smoked paprika
½ tsp salt
½ tsp pepper
½ cup oil for frying

Method

  1. In a bowl, combine minced chicken, panko breadcrumbs, milk, smoked paprika, salt and pepper. Marinate for 30mins before shaping them onto bite-sized meatballs.
  2. In a pan, heat ½ cup of oil over medium heat and fry meatballs until golden. Set aside.
  3. In a blender, blend ingredients for spice paste until smooth.
  4. In a pot, heat 1 tbsp of oil over medium heat and sauté paste until fragrant. Add coconut milk, fish sauce and gula melaka. Simmer for 2mins.
  5. Then add in pan-fried meatballs and mix until they are well-coated.
  6. Heat Plain Pita and Wholemeal Pita according to instructions on the pack. Then, cut into halves and open the pockets.
  7. Put shredded cabbage and lettuce into the pockets and top with curry meatballs.
