材料

全麦厚卷饼5片
烤鸡1只,放凉切碎
蛋黄酱¼杯
胡萝卜2根,磨碎
黄瓜1根,切丝
青葱3根,切细碎
芫荽叶1杯
指天椒2个,切细碎

调味料

酱油1大匙
鱼露1大匙
细砂糖1小匙
蒜头1瓣,切碎

做法

  1. 准备调味料;在搅拌碗中混合酱油、鱼露、细砂糖和蒜头,拌匀待用。
  2. 在全麦厚卷饼上撒上适量清水,放在在加热的烤盘上烤(切开时饼皮不会破裂),烤好后切半。
  3. 打开切半的全麦厚卷饼,形成一个口袋,在内部涂上蛋黄酱。
  4. 放进鸡丝、胡萝卜、黄瓜、青葱和芫荽叶,撒上辣椒,然后淋上调味料,接着重复上述步骤把剩余卷饼装满即可。

Roast Chicken Banh Mi Pita

Ingredients

5 Mission Wholemeal Pita
1 roast chicken, cooled and shredded
¼ cup mayonnaise
2 carrots, grated
1 cucumber, julienned
3 spring onions, finely shredded
1 cup coriander leaves
2 bird’s eye chillies, finely sliced

Banh Mi Seasoning

1 tbsp soy sauce
1 tbsp fish sauce
1 tsp caster sugar
1 garlic clove, finely chopped

Method

  1. To prepare banh mi seasoning: in a bowl, combine soy sauce, fish sauce, caster sugar and garlic. Mix well and set aside.
  2. Take Mission Wholemeal Pita and sprinkle with some water before grilling on a heated grill pan (so pita is softer when cutting the pockets). Once grilled, cut into halves.
  3. Open up each half of pita to create a pocket and spread the inside with mayonnaise.
  4. Fill pocket with shredded chicken, carrot, cucumber, spring onion and coriander. Scatter with chilli, then drizzle with banh mi seasoning. Repeat for the remaining pita pockets.
