材料

熟香蕉泥1¼杯
香蕉1条,切成2寸薄片(可选)
大型鸡蛋2个,室温
黄糖½杯
植物油(或椰子油)1/3杯
香草精1小匙
全麦蛋糕粉1杯
全麦面粉½杯
燕麦½杯,另备2大匙装饰用
泡打粉1½小匙
小苏打½小匙
盐½小匙
肉桂¼小匙
切碎的核桃¾杯,另备2大匙装饰用

做法

  1. 烤箱预热至218°C,把10个杯蛋糕烤模铺好烘焙纸,用喷雾均匀上油待用。
  2. 在大型搅拌碗中,把捣碎的香蕉、鸡蛋、黄糖、油和香草精至充分混合均匀。
  3. 用刮刀把面粉、燕麦、泡打粉、小苏打、盐和肉桂粉翻拌均匀,在即将混合好前拌入切碎的核桃。
  4. 把面糊倒进准备好的杯蛋糕烤模中,倒满大约3/4。把2大匙核桃和2大匙燕麦混合在一起,撒在面糊上,另外再铺上香蕉片。
  5. 放进烤箱烤5分钟,然后把温度调至190°C,继续烤10-15分钟至蛋糕成金黄色且有弹性,取出后放凉至少10分钟即可。

Magical Whole Wheat Banana Muffins

Ingredients

1¼ cups mashed extra ripe bananas
1 banana, sliced into 2 inch slivers (optional)
2 large eggs, room temperature
½ cup light brown sugar
1/3 cup vegetable (or coconut) oil
1 tsp vanilla extract
1 cup whole wheat pastry flour
½ cup whole wheat flour
½ cup old fashioned oats, plus additional 2 tbsp for topping
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
¼ tsp cinnamon
3/4 cup chopped walnuts, plus additional 2 tbsp for topping

Method

  1. Preheat oven to 218°C. Line 10 muffin tins with muffin liners, spray with non-stick baking spray, set aside.
  2. In a large mixing bowl, whisk mashed banana, eggs, brown sugar, oil, and vanilla extract until well combined.
  3. Use a spatula to fold in both flours, oats, baking powder, baking soda, salt, and cinnamon, mixing until combined. Fold in ¾ cup chopped walnuts in the last few strokes of mixing.
  4. Scoop batter into prepared muffin tins, filling 3/4 of the way up. Combine 2 tbsp of walnuts with 2 tbsp of oats. Sprinkle over muffins. Top muffins with a 2″ sliver of banana.
  5. Bake in oven for 5mins, then turn oven down to 190°C and bake for an additional 10-15mins, until muffins are golden brown and spring back to the touch. Remove from oven and allow to cool for at least 10mins before eating.
