蜂蜜香橙芝士可丽饼卷
面糊
全脂牛奶1½杯
大型鸡蛋6个
融化的牛油4大匙
蜂蜜2大匙
盐½小匙
面粉1½杯
肉桂3/4小匙
橙皮1大匙
奶酪馅
乡村芝士162克
意大利乳清干酪246克,沥干
蜂蜜2大匙
大型蛋黄1个
香草1小匙
盐少许
做法
- 制作面糊:把所有面糊材料放入KitchenAid搅拌机,用速度4搅打10秒钟,加盖后把搅拌碗放入冰箱,放置20分钟。
- 用中高火加热10寸不粘锅,轻轻刷一层油,把约¼杯的面糊倒在表面,迅速晃动不沾锅把面糊铺开,形成薄薄的一层,继续加热1分钟左右至表面变干,然后翻面稍微加热至凝固(不超过5秒),取出可丽饼,用剩余面糊重复该步骤,把做好的可丽饼叠在一起待用。
- 准备奶酪馅:在立式搅拌机上安好搅打网,加入2种芝士、蛋黄、香草和盐,用速度4搅拌30秒。
- 把1张可丽饼平铺,在中心加2大匙奶酪馅,把底部向上折至馅料,稍微压平,然后把两侧也折好,做成长方形,把开口一面翻转,留在底部。继续完成剩余的可丽饼卷。
- 准备享用前,用中火在煎锅中溶化少许黄油,轻轻放入2-3条可丽饼卷,盖上锅盖加热2-3分钟至金黄色,轻轻翻面后再次盖上锅盖,继续加热2分钟。取出后搭配酸奶油和橘子果酱享用即可。
Honey Orange Cheese Blintzes
Batter
1½ cups whole milk
6 large eggs
4 tbsp melted butter
2 tbsp honey
½ tsp salt
1½ cups flour
¾ tsp cinnamon
1 tbsp orange zest
Cheese Filling
162g cottage cheese
246g ricotta cheese, drained
2 tbsp honey
1 large egg yolk
1 tsp vanilla
pinch salt
Method
- Make batter: Place all batter ingredients into KitchenAid blender. Turn to speed 4 and blend mixture for 10s. Keep cap on and place blender jar in refrigerator to rest batter for at least 20mins before using.
- Heat a 10-inch, non-stick skillet over medium-high heat. Use a pastry brush to lightly coat the surface. Pour in about 1/4 cup batter into the hot pan and immediately swirl batter around to coat bottom of pan in a thin, even layer of batter. Cook until the surface looks dry – about a minute. Flip crepe over and cook briefly to set the other side (no more than 5 seconds). Remove crepe and repeat with remaining batter, stacking crepes in a stack, set aside.
- Make cheese filling: Fit stand mixer with whisk attachment. Add cheeses, egg yolk, vanilla and salt. Turn mixer speed to 4 and blend mixture for 30s.
- Lay a crepe, add 2 tbsp of cheese filling at the centre. Fold bottom edge up over filling and flatten slightly. Fold in both sides, fold up crepe into a small rectangle, ending with the seam on the bottom. Set blintz aside and continue filling the remaining crepes.
- When ready to eat, melt a bit of butter in a skillet over medium heat. Gently place 2-3 blintzes in pan, cover and cook for 2-3mins, or until golden brown. Use a spatula to gently turn the blintzes, cover again and cook for another 2mins. Serve warm with sour cream and orange marmalade.
