材料

螺旋意大利面400克
橄榄油1大匙
蒜头1瓣,磨碎
辣椒碎1小匙
小茴香籽1小匙
香肠1包,稍微切小块
地中海什锦蔬菜550克
意大利香醋酱1大匙
番茄碎2听
欧芹1把,切碎
帕玛森芝士适量

做法

  1. 把意大利面按照包装上的指示煮熟。同时在平底锅中用中高火加热橄榄油,加入蒜头、辣椒碎和小茴香籽。
  2. 香料开始滋滋作响的时候,加入香肠番号3分钟,用木汤匙切成小段,继续翻炒至稍微焦香。
  3. 加入地中海风格什锦蔬菜,用盐和胡椒调味,继续煮至蔬菜熟软。
  4. 加入香醋拌匀,煮至稍微起泡,加入番茄碎和约1/4罐的煮面水。
  5. 中火焖煮10分钟至汤汁浓稠,用盐和胡椒调味。如果酱汁太干,可以用煮面水稍微调节浓度。
  6. 把煮好的意大利面沥干,和欧芹一起拌入酱汁中,缀以芝士和黑胡椒。
  7. 素食版本可以用素香肠取代,再去掉芝士即可。

Spicy Sausage Pasta

Ingredients

400g fusilli pasta
1 tbsp olive oil
1 garlic clove, grate
1 tsp chilli flakes
1 tsp fennel seeds
1 pack sausage, roughly chopped
550g Chunky Mediterranean Style Veg Mix
1 tbsp balsamic vinegar
2tins chopped tomatoes
1 bunch flat-leaf parsley, chopped
some parmesans

Method

  1. Cook pasta according to instructions. Meanwhile, heat olive oil in a saucepan over a medium-high heat, add garlic, chilli flakes and fennel seeds.
  2. When they begin to sizzle, add sausages and fry for 3mins, breaking up pieces with a wooden spoon until they begin to caramelise.
  3. Add Mediterranean Style veg mix, season with salt and pepper, and continue to cook until slightly softened.
  4. Add balsamic vinegar, stir and let it bubble away, then add chopped tomatoes and around ¼ can of cooking water.
  5. Simmer over a medium heat for 10mins until thickened. Season with salt and pepper to taste. Use a little more of pasta cooking water to loosen the sauce if it looks too dry.
  6. When pasta is cooked, drain it and toss it through the sauce with fresh parsley, then serve with grated parmesan and black pepper.
  7. For a vegan version, substitute sausages with sausoyges, and leave out parmesan.
