辣香肠意面
材料

螺旋意大利面400克
橄榄油1大匙
蒜头1瓣,磨碎
辣椒碎1小匙
小茴香籽1小匙
香肠1包,稍微切小块
地中海什锦蔬菜550克
意大利香醋酱1大匙
番茄碎2听
欧芹1把,切碎
帕玛森芝士适量
做法
- 把意大利面按照包装上的指示煮熟。同时在平底锅中用中高火加热橄榄油,加入蒜头、辣椒碎和小茴香籽。
- 香料开始滋滋作响的时候,加入香肠番号3分钟,用木汤匙切成小段,继续翻炒至稍微焦香。
- 加入地中海风格什锦蔬菜,用盐和胡椒调味,继续煮至蔬菜熟软。
- 加入香醋拌匀,煮至稍微起泡,加入番茄碎和约1/4罐的煮面水。
- 中火焖煮10分钟至汤汁浓稠,用盐和胡椒调味。如果酱汁太干,可以用煮面水稍微调节浓度。
- 把煮好的意大利面沥干,和欧芹一起拌入酱汁中,缀以芝士和黑胡椒。
- 素食版本可以用素香肠取代,再去掉芝士即可。
Spicy Sausage Pasta
Ingredients
400g fusilli pasta
1 tbsp olive oil
1 garlic clove, grate
1 tsp chilli flakes
1 tsp fennel seeds
1 pack sausage, roughly chopped
550g Chunky Mediterranean Style Veg Mix
1 tbsp balsamic vinegar
2tins chopped tomatoes
1 bunch flat-leaf parsley, chopped
some parmesans
Method
- Cook pasta according to instructions. Meanwhile, heat olive oil in a saucepan over a medium-high heat, add garlic, chilli flakes and fennel seeds.
- When they begin to sizzle, add sausages and fry for 3mins, breaking up pieces with a wooden spoon until they begin to caramelise.
- Add Mediterranean Style veg mix, season with salt and pepper, and continue to cook until slightly softened.
- Add balsamic vinegar, stir and let it bubble away, then add chopped tomatoes and around ¼ can of cooking water.
- Simmer over a medium heat for 10mins until thickened. Season with salt and pepper to taste. Use a little more of pasta cooking water to loosen the sauce if it looks too dry.
- When pasta is cooked, drain it and toss it through the sauce with fresh parsley, then serve with grated parmesan and black pepper.
- For a vegan version, substitute sausages with sausoyges, and leave out parmesan.
