配料

面粉550克
盐½小匙
肉豆蔻粉¼小匙
细砂糖60克
活性干酵母7克
细砂糖1小匙
大型蛋黄2个(室温)
大型鸡蛋1个(室温)
温水55克(约40°C)
全脂牛奶280克
无盐牛油100克(切丁)
橙子/柠檬果皮屑(可选)

方法

  1. 把面粉、盐、肉豆蔻粉和糖过筛进搅拌机的大碗中,放置待用。
  2. 混合活性干酵母、1小匙糖和温水,静置5分钟至表面产生泡沫。
  3. 与此同时,加热牛奶(但不要煮沸)并倒进在放进碗中的牛油上,融化牛油并放凉至35-40°C左右。
  4. 在面粉混合物中加入鸡蛋、酵母和牛油/牛奶混合物,以中低速搅拌约10分钟至面团开始拉伸,质感柔软。
  5. 把面团放进撒上面粉的大碗中,盖上干净的棉布或保鲜膜,放在温暖的地方发酵约1小时至双倍尺寸。
  6. 面团发酵后,稍微捶打,排出空气,然后在撒上面粉的案板上擀平至约1.5-2厘米厚,用5厘米的心形切模切成小块,放在铺好烘焙纸的烤盘上,盖上干净的棉布或保鲜膜,发酵20-30分钟。
  7. 把1升植物油加热至170-180°C,一次可油炸3-4个甜甜圈,两面均油炸数分钟至金黄色,取出后放在厨房用纸巾上,冷却后再撒上糖霜即可。

Heart Shaped Doughnuts

Ingredients

550g all-purpose flour
½ tsp salt
¼ tsp ground nutmeg
1 tsp caster sugar
60g
7g active dry yeast
2 large egg yolks (room temperature)
1 large egg (room temperature)
55g lukewarm water (approx. 40°C)
280g warm whole milk
100g unsalted butter (cubed)
orange/lemon zest (optional)

Method

  1. In the bowl of standing mixer, sift and combine flour, salt, ground nutmeg and sugar. Set aside.
  2. Combine active dry yeast, 1 tsp of sugar and lukewarm water. Let it rest for 5mins until the top becomes frothy.
  3. In the meantime, warm milk (but don’t let it boil) and pour it over butter in a medium sized bowl to melt butter, keep it at about 35-40°C.
  4. Add whisked eggs, yeast and butter/milk mixture to flour mixture, knead on medium-low speed for about 10mins, until it starts pulling away from the sides of your bowl and is soft to the touch.
  5. Transfer dough to a floured large bowl. Cover with a clean tea towel or cling film and allow it to rise in a warm place for about 1hr or until it doubles in size.
  6. Once dough is ready, punch it a little to deflate it, transfer on a clean, floured surface and roll it to about 1.5-2cm thick. Using a 5cm heart shaped cookie cutter, cut dough into hearts and place on a baking sheet lined with baking paper. Cover with a clean tea towel or plastic wrap and let them rest and rise for another 20-30mins.
  7. Heat up 1 litre of vegetable oil to 170-180°C. Fry 3-4 doughnuts at a time for a couple of minutes on each side or until golden. Remove from oil and leave on paper towels to let them cool completely before covering with sugar.
