素肉丸番茄意面
材料
素肉丸5粒
生意面50克
盐少许
番茄酱
西芹100克
小茴香100克
洋葱200克
胡萝卜200克
蒜头10克
小茴香籽5克,磨碎
八角1克,磨碎
黑胡椒1克,磨碎
月桂叶1片
橄榄油40克
番茄果肉20克
罐头整番茄1200克
素高汤500克
盐5克
糖5克
雪莉酒醋10克
烤胡萝卜
去皮胡萝卜50克
清油1大匙
盐和胡椒少许
接骨木蘸酱
接骨木果汁1大匙
白酒醋1大匙
柠檬汁1小匙
素蛋黄酱40克
大豆优格10克
盐和胡椒少许
做法
- 准备番茄酱:用橄榄油把洋葱、茴香、胡萝卜、芹菜和蒜头一起用小火炒香约20分钟至熟软,不要炒焦。
- 加入香料和番茄果肉,继续炒约5分钟,然后加入罐头番茄和高汤,继续煮约1小时。
- 加入雪莉酒醋、糖和盐,一起煮滚。
- 准备烤胡萝卜:把胡萝卜切成2厘米的薄片,用油拌匀,用盐和胡椒粉调味,用200°C的烤箱烤15-20分钟。
- 准备接骨木蘸酱:把所有材料拌匀,用盐和黑胡椒调味。
- 把素肉丸按照包装上的指示煮熟。
- 用加盐的滚水把意大利面煮熟,沥干后淋上番茄酱和接骨木蘸酱,缀以烤胡萝卜即可。
Plant Balls with Pasta and Tomato Sauce
Ingredients
5 plant balls
50g uncooked pasta
some salt
Tomato Sauce
100g celery
100g fennel
200g onions
200g carrots
10g garlic
5g fennel seeds, grounded
1g star anise, grounded
1g black pepper, grounded
1 bay leaf
40g olive oil
20g tomato puree
1200g whole canned tomatoes
500g vegetable bouillon
5g salt
5g sugar
10g sherry vinegar
Oven Roasted Carrots
50g peeled carrots
1 tbsp cooking oil
salt and black pepper to taste
Elderberry Dip
1 tbsp elderberry drink
1 tbsp white wine vinegar
1 tsp lemon juice
40g vegan mayonnaise
10g soy yoghurt
salt and black pepper to taste
Method
- Prepare tomato sauce: Soften finely-chopped onions, fennel, carrots, celery and garlic in olive oil. Cook over low heat without browning for about 20mins.
- Add spices and tomato puree. Sauté for about 5mins. Add tomatoes and vegetable bouillon. Let simmer for about 1hr.
- Add vinegar, sugar and salt, bring to a boil.
- Prepare oven-roasted carrots: Cut carrots into 2cm slices, toss with cooking oil, season with salt and pepper and cook in oven 200°C for 15-20mins. Serve warm.
- Prepare elderberry dip: Mix all ingredients while stirring, seasoning with salt and black pepper.
- Heat up plant balls according to package instructions.
- Cook pasta in a pot of water with a pinch of salt. Drain and plate. Top off with tomato sauce, elderberry dip and roasted carrots.
