饺子皮
高筋面粉250克
菠菜汁125克
盐少许
馅料
五花肉碎250克、清水50克
姜茸2.5克、盐2.5克
鸡精粉2.5克、白砂糖7.5克
生粉10克、胡椒粉适量
香麻油适量、韭菜(切碎)125克
燕窝碎50克
做法
- 混合所有饺子皮材料成面团待用。
- 准备馅料:把五花肉碎、姜茸、盐和生粉混拌均匀,分次加入清水,最后加入香麻油。
- 加入韭菜和燕窝轻轻拌匀成馅料。
- 取5克面团擀成圆形,取10克馅料放在上面,裹成元宝形。继续做下一个饺子至馅料用完。
- 在滚水中煮4分钟即可。

Skin
250g gluten flour
125g spinach juice
some salt
Filling
250g minced pork
50g water
2.5g minced ginger
2.5g salt
2.5g chicken powder
7.5g coarse sugar
10g cornstarch
some pepper
some sesame oil
125g chives(minced)
50g bird’s nest
Method
- Mix all Skin ingredients to form dough. Set aside.
- Perpare filling: Mix minced pork, ginger, salt and cornstarch to a paste. Gradually add small quantities of water until it finished. Add sesame oil.
- Mix in minced chives and bird’s nest gently.
- Take 5g dough and roll into round shape. Place 10g of filling and wrap it to form an ingot shape. Repeat for the rest of filling.
- Cook in boling water for 4mins.
