酸辣鸡丝
材料A
去骨鸡腿肉400克
辣椒油100克
炸蒜茸100克
炸红葱头碎100克
黄瓜100克,切片
材料B
糖180克
黑醋120克
酱青80克
干辣椒碎10克
芝麻酱1小匙
麻油1小匙
花椒粉少许
做法
- 把鸡腿肉蒸/煮熟,放凉待用。
- 把材料B混合均匀至糖完全融化。
- 加入辣椒油、炸蒜茸头和炸红葱头碎,混合均匀成酸辣酱。
- 把鸡肉撕成细丝后放在黄瓜片上,淋上酸辣酱即可。
Spicy Shredded Chicken
Ingredients A
400g boneless chicken leg
100g chili oil
100g fried minced garlic
100g fried minced shallots
100g cucumber, sliced
Ingredients B
180g sugar
120g black vinegar
80g light soya sauce
10g chili flakes
1 tsp sesame sauce
1 tsp sesame oil
a pinch of szechuan peppercorn powder
Methods
- Steam/boil chicken leg until cooked. Set aside and allow to cool.
- Combine Ingredients B and mix well till sugar dissolves.
- Add in chili oil, fried minced garlic and fried minced shallot. Mix well to spicy sour sauce.
- Finely shred cooked chicken leg meat and place over sliced cucumber. Drizzle sauce over shredded chicken and serve immediately.
