樱桃冻

樱桃果肉100毫升
鱼胶片1片

腌甜瓜

甜瓜½个
葡萄酒醋200毫升
糖50克

火鸡沙拉

火鸡胸肉1片,切碎
青灯笼椒½个,切碎
黄灯笼椒½个,切碎
红灯笼椒½个,切碎
蛋黄酱2大匙
盐和胡椒少许

做法

  1. 准备樱桃冻:把鱼胶片放进冷水浸软10分钟。
  2. 加热樱桃果肉至温热,拌入鱼胶片至混合物凝固。
  3. 切成适当大小的片状待用。
  4. 准备腌甜瓜:把甜瓜切成适当大小的片状。
  5. 把糖拌入葡萄酒醋至完全融化,加入甜瓜片腌味过夜。
  6. 准备火鸡沙拉:把灯笼椒碎多余的水分挤出后混合所有材料,用模具做成适当的大小和形状。
  7. 用甜瓜片做底,每片放上一片樱桃冻和一份火鸡沙拉即可。

3-tiered Canapé: Cherry Gelee, Marinated Rockmelon, Turkey Salad

Cherry Gelee

100ml cherry purée
1 gelatin sheet

Marinated Rockmelon

½ rockmelon
200ml white wine vinegar
50g sugar

Turkey Salad

1 turkey breast, chopped
½ green capsicum, minced
½ yellow capsicum, minced
½ red capsicum, minced
2 tbsp mayonnaise
dash of salt and pepper

Method

  1. Prepare cherry gelee: Soak gelatin sheet in cold water for 10mins.
  2. Heat up cherry purée till warm. Mix in gelatin and let it set.
  3. Cut into desired shape and set aside.
  4. Prepare marinated rockmelon: Cut rockmelon into desired shape.
  5. Dissolve sugar in white wine vinegar and add in rockmelon to marinate overnight.
  6. Prepapre turkey salad: Squeeze minced capsicum to remove excess juice. Mix all ingredients and make into desired shape with mould.
  7. Plate marinated rockmelon pieces as base, add cherry gelee and turkey salad on top.
