材料

整只火鸡1只
百里香2枝
牛油200克
盐和胡椒粉适量
焦糖栗子
栗子500克
糖300克

做法

  1. 准备焦糖栗子:把糖用中火融化后继续煮2-3分钟成焦糖,加入栗子搅拌均匀待用。
  2. 把牛油用中火加热至融化,加入百里香后关火,放置24小时待用。
  3. 把烤箱预热至180°C。
  4. 把焦糖栗子塞入火鸡内,把百里香牛油均匀涂抹在火鸡表面,洒上盐和胡椒粉调味。
  5. 把火鸡用锡纸包好,放入烤箱烤2½小时。
  6. 去掉锡纸,把火鸡放回烤箱继续烤30分钟至金黄色,期间可把汤汁浇回在火鸡上。
  7. 取出火鸡,放置30分钟后即可享用。

Thyme Baked Butter Turkey

Ingredients

1 whole turkey
2 sprig thyme
200g butter
some salt and pepper powder

Caramelized Chestnuts

500g chestnuts
300g sugar

Method

  1. Prepare caramelized chestnuts: Melt sugar over medium heat. Continue heat up 2-3mins until caramelized. Add in chestnuts and mix well. Set aside.
  2. Melt butter over medium heat. Add in thyme and turn off heat. Leave thyme soaked in butter for 24hrs until set.
  3. Preheat oven to 180°C.
  4. Stuff turkey with caramelized chestnuts. Spread thyme butter over turkey. Season with salt and pepper powder.
  5. Wrap turkey well with aluminium foil. Bake in oven for 2½ hrs.
  6. Discard aluminium foil and send turkey back to oven to bake for another 30mins until golden brown. Baste continuously while baking.
  7. Take out turkey and set for 30mins before serving.
